Tips for success
For the best texture, always cook ribs on low. High heat can make the meat tough and chewy, while low heat slowly melts the collagen and fat, resulting in tender, juicy meat.
If you're in a hurry, you can cook on high for 3 to 4 hours, but the results won't be quite as good.
To get a caramelized crust, after the ribs are cooked, transfer them to a baking sheet lined with foil, brush with some of the sauce from the slow cooker, and broil for 2 to 3 minutes until bubbly and slightly charred. Watch them closely—they can burn quickly.
Variations
- Spicy Kick: Add 1 teaspoon of chipotle powder or a minced jalapeño to the sauce before pouring over the ribs. This adds a smoky heat that balances the sweetness.
- Garlic Lover's: Sprinkle 4 cloves of minced garlic over the onions before adding the sauce. Garlic infuses the ribs with a savory depth.
- Apple Cider: Replace 1/4 cup of the barbecue sauce with apple cider vinegar. This brightens the sauce and adds a tangy note that cuts through the richness.
- Honey Mustard: Mix 1/4 cup of Dijon mustard into the barbecue sauce before pouring. The mustard adds a tangy, slightly spicy flavor that pairs well with the honey.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools.
- Freezer
- Freeze cooked ribs in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat ribs in a 300°F (150°C) oven for 10-15 minutes, or in the microwave in 30-second bursts until hot.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; you can thin it with a little water or apple juice when reheating.
Reheat gently in the microwave or in a saucepan over low heat until warmed through.
You can assemble the ribs in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. This makes the recipe even more convenient for busy days.
Serving ideas
Serve these ribs with classic sides like coleslaw, potato salad, or cornbread. The sweet and smoky flavor pairs well with tangy, creamy sides. A simple green salad with a vinaigrette can also cut through the richness.
For a casual meal, set out the ribs on a platter with extra sauce and let everyone help themselves.
You can also serve them on slider buns with a little coleslaw for a fun, handheld option. Leftover ribs are great chopped up and added to baked beans or mac and cheese.

Sweet Vidalia Honey Hickory Baby Back Ribs: Dump-and-Forget Crockpot

Ingredients
- 2 racks baby back pork ribs (about 2 lb total)
- 2 large Vidalia onions, thinly sliced
- 1/2 cup packed light brown sugar
- 1 1/2 cups honey hickory barbecue sauce
Instructions
- Place the two racks of baby back ribs side by side in the bottom of a 6-quart slow cooker. If needed, cut each rack in half to fit. Scatter the sliced Vidalia onions evenly over the ribs, then sprinkle the brown sugar over the onions and ribs.
- Pour the honey hickory barbecue sauce evenly over the onions and ribs, using a spatula to spread it so every surface is coated. The sauce will look generous, but it thins as the meat releases juices.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the meat is very tender and pulls easily from the bone. Avoid lifting the lid during cooking, as each peek adds 20 minutes to the cook time. Let it rest for 3 minutes before slicing.
- Using an instant-read thermometer, check the thickest part of the meat without touching bone. The ribs are safe to eat when they reach 145°F (63°C), but for fall-off-the-bone tenderness, cook until they are fork-tender and the meat easily pulls apart. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes. This helps the juices redistribute and makes the meat easier to handle. Use tongs or a fork to transfer the ribs to a cutting board.
- Place the ribs on a serving platter or individual plates. Spoon the caramelized onions and sauce from the slow cooker over the top. Serve hot, with extra sauce on the side if desired.
