Tips for success

For a thicker sauce, transfer the liquid from the slow cooker to a small saucepan and simmer over medium heat for 5–10 minutes, until reduced and syrupy.

This concentrates the flavor and makes a beautiful glaze to drizzle over the finished dish.

If you prefer a spicier version, add a pinch of red pepper flakes or a drizzle of sriracha along with the teriyaki glaze. The heat balances the sweetness of the pineapple beautifully. Adjust the amount to your taste.

Variations

  • Spicy Pineapple Teriyaki: Add 1–2 teaspoons of sriracha or red pepper flakes along with the teriyaki glaze. The heat will balance the sweetness of the pineapple and create a sweet-spicy glaze that pairs well with the tender chicken.
  • Garlic Ginger Twist: Stir in 2 minced garlic cloves and 1 tablespoon of grated fresh ginger when adding the teriyaki glaze. This adds a fragrant, aromatic depth that complements the pineapple and soy flavors.
  • Hawaiian Style: Add 1/2 cup of diced bell peppers and 1/2 cup of chopped red onion along with the pineapple. The vegetables will soften during cooking and add color and texture to the dish.
  • Sesame Crunch: After cooking, sprinkle the finished dish with an extra tablespoon of toasted sesame seeds and a handful of crushed roasted peanuts for added crunch and nutty flavor.

Storage and make-ahead

Fridge
Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently before serving.
Freezer
Freeze cooked chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
Reheat
Reheat in a microwave or in a skillet over medium heat until piping hot. Add a splash of water or chicken broth if the sauce has thickened too much.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will continue to absorb the sauce, so it will be even more flavorful the next day.

Reheat gently in the microwave or in a skillet over medium heat until warmed through.

This recipe can be assembled the night before. Place the chicken, pineapple, teriyaki glaze, and sesame seeds in the slow cooker insert, cover, and refrigerate overnight.

In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the chicken drumsticks over steamed jasmine rice to soak up the delicious sauce. The rice provides a neutral base that lets the sweet and savory flavors shine. Add a side of steamed broccoli or a simple green salad for a complete meal.

For a low-carb option, serve the chicken over cauliflower rice or alongside roasted vegetables.

The pineapple and teriyaki glaze are sweet and satisfying on their own, so you won't miss the rice. Garnish with extra sesame seeds and sliced green onions for a fresh finish.

Frequently asked questions

Can this recipe be made with chicken thighs?
Yes, bone-in, skin-on chicken thighs work well. They have a similar cooking time to drumsticks and will also become fall-off-the-bone tender. Check for doneness at 4 hours and continue cooking if needed.
Can the cooking time be reduced?
The slow cooker is designed for low and slow cooking. Reducing the time may result in tougher chicken. If short on time, use a pressure cooker: cook on high pressure for 15 minutes, then natural release for 10 minutes.
Why does the sauce become watery?
The pineapple juice and chicken release liquid during cooking. To thicken the sauce, remove the chicken and simmer the liquid on the stovetop until reduced. Alternatively, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the sauce.
Can this be made without a slow cooker?
Yes, use a Dutch oven and braise in the oven at 300°F (150°C) for 2 to 2 1/2 hours, or until the chicken is tender and reaches 165°F (74°C). Cover the pot tightly.
How can this be made gluten-free?
Use a gluten-free teriyaki glaze and ensure the sesame seeds are certified gluten-free. Soy sauce in the glaze is the usual source of gluten, so check the label or use tamari.

Sweet Teriyaki Pineapple Chicken Drumsticks

Glazed chicken drumsticks with pineapple in a slow cooker, topped with sesame seeds

Ingredients

  • 8 chicken drumsticks
  • 20 oz pineapple chunks in juice
  • 1 cup teriyaki glaze
  • 2 tbsp toasted sesame seeds

Instructions

  1. Place the chicken drumsticks in the slow cooker, arranging them in a single layer as much as possible. They can overlap slightly, but try to keep them in a circle around the bottom of the pot.
  2. Pour the pineapple chunks and their juice over the chicken. Spread them around so they settle between the drumsticks.
  3. Drizzle the teriyaki glaze evenly over the chicken and pineapple. Use a spoon to ensure the glaze reaches the bottom of the pot.
  4. Sprinkle the toasted sesame seeds over the top of the chicken and pineapple. They will toast further and add a nutty flavor as the dish cooks.
  5. Cover the slow cooker and cook on low for 4 to 5 hours, until the chicken is tender and cooked through. The internal temperature of the thickest part of a drumstick should reach 165°F (74°C).
  6. After 4 hours, check the chicken for doneness. The meat should be pulling away from the bone and easily pierced with a fork. If not, continue cooking for another 30 minutes.
  7. Spoon the hot chicken and pineapple over steamed jasmine rice. Drizzle with extra sauce from the slow cooker and sprinkle with additional sesame seeds if desired.
Contains: gluten, soy, sesame
