Tips for success
For the best texture, use chicken thighs rather than breasts. Thighs are more forgiving and stay moist during the long cooking time.
If you prefer a thicker sauce, mix one tablespoon of cornstarch with two tablespoons of water and stir it into the slow cooker during the last 15 minutes. This will give you a glossy, clingy sauce that coats every shred of chicken.
Don't be tempted to cook on high to save time—low and slow is what makes the chicken so tender. The garlic cloves are a hidden gem; they become sweet and spreadable, so don't skip them.
If you want a little heat, add a pinch of red pepper flakes with the glaze. Serve with steamed jasmine rice and extra scallions for a fresh finish.
Variations
- Spicy Teriyaki Chicken: Add 1-2 teaspoons of sriracha or red pepper flakes along with the teriyaki glaze. The heat will balance the sweetness and add a pleasant kick. Garnish with extra sesame seeds and sliced chili if desired.
- Ginger-Scallion Chicken: Add 2 tablespoons of freshly grated ginger to the slow cooker along with the garlic. The ginger's bright, zesty flavor complements the scallions and teriyaki. Serve with extra fresh ginger slivers on top.
- Honey Garlic Chicken: Replace half of the teriyaki glaze with honey and add 2 extra minced garlic cloves. This version is sweeter and more intensely garlicky. Reduce the honey to 1/4 cup if you prefer a less sweet dish.
- Pineapple Teriyaki Chicken: Add 1 cup of pineapple chunks (fresh or canned, drained) to the slow cooker with the other ingredients. The pineapple adds a tropical sweetness and a slight tang. Serve with the pineapple pieces as a garnish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of water if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot. Add a little water if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will keep well and the flavors will meld even more. Reheat gently in a saucepan over medium heat, or in the microwave, adding a splash of water if the sauce has thickened too much.
This recipe is perfect for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low for 4 hours. You can also cook the full recipe, shred the chicken, and store it in the fridge for up to 4 days. Reheat portions as needed.
Serving ideas
Serve the shredded chicken over steamed jasmine rice, with a generous spoonful of the glaze from the slow cooker. The garlic cloves are a treat—mash them into the rice or spread them on a piece of crusty bread.
Top with the reserved sliced scallions for a fresh, oniony bite. A side of steamed broccoli or a simple cucumber salad would round out the meal nicely.
For a low-carb option, serve the chicken over cauliflower rice or alongside sautéed greens. The dish is also delicious in lettuce wraps, with the chicken and garlic spooned into crisp leaves and topped with extra scallions.
If you have leftovers, use them as a filling for tacos or quesadillas—the sweet teriyaki flavor pairs surprisingly well with a little cheese and a squeeze of lime.

Sweet Teriyaki Garlic Scallion Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 12 whole garlic cloves, peeled
- 4 scallions, sliced (white and green parts separated)
- 1/2 cup teriyaki glaze
- 1 tbsp toasted sesame seeds
Instructions
- Place the chicken thighs in the slow cooker in a single layer. Scatter the whole garlic cloves and the white parts of the sliced scallions over the chicken. Reserve the green scallion parts for serving.
- Pour the teriyaki glaze evenly over the chicken and aromatics. Sprinkle the toasted sesame seeds over the top. Do not stir.
- Cover the slow cooker and cook on low for 4 hours, or until the chicken is fork-tender and easily pulls apart. The internal temperature of the thickest part of the chicken should reach 165°F (74°C).
- Using two forks, shred the chicken thighs directly in the slow cooker. Stir gently to coat the shredded chicken with the glaze. Let it sit for 5 minutes so the sauce thickens slightly.
- Serve the shredded chicken and garlic cloves over steamed jasmine rice. Garnish with the reserved sliced green scallions.
