Tips for success
For the best flavor, sear the pork roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
However, if you're short on time, you can skip this step—the slow cooker will still produce deliciously tender pork.
Don't be afraid to customize the vegetables. While bell peppers and onions are classic, you can also add sliced mushrooms, carrots, or even a handful of cherry tomatoes in the last hour of cooking.
The key is to keep the vegetable layer thick enough to support the roast and create plenty of sauce.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the butter. This adds a smoky, spicy kick that pairs well with the sweetness of the peppers and onions.
- Citrus Herb: Swap the garlic-herb butter for a citrus-herb butter by mixing softened butter with lemon zest, orange zest, thyme, and garlic. This bright, fresh flavor is perfect for spring.
- BBQ Pulled Pork: After shredding the pork, toss it with your favorite barbecue sauce and serve on buns with coleslaw. Omit the egg noodles and serve as a sandwich.
- Taco Night: Shred the pork and serve in warm tortillas with diced onions, cilantro, and a squeeze of lime. The garlic-herb butter adds a unique twist to classic tacos.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if needed.
- Freezer
- Freeze the shredded pork and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little broth or water if the sauce has thickened.
Store any leftover pork and vegetables in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the sauce has thickened too much.
You can assemble the entire dish the night before: place the seasoned pork, peppers, onions, and butter in the slow cooker insert, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook as directed. This is a great time-saver for busy mornings.
Serving ideas
Serve the shredded pork over a bed of warm buttered egg noodles, as shown in the video. The noodles soak up the flavorful gravy, making every bite satisfying.
You can also serve it over mashed potatoes, rice, or even on crusty rolls for a pulled-pork sandwich. For a lighter option, serve it alongside a simple green salad or roasted vegetables.
To finish the dish, sprinkle with fresh chopped parsley or chives for a pop of color and freshness. A side of crusty bread is perfect for sopping up any remaining sauce. This is a meal that's meant to be enjoyed with family and friends, and it's sure to become a weeknight favorite.

Sweet Pepper Garlic Butter Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 3 bell peppers (red and green), sliced into thick strips
- 2 yellow onions, sliced
- 4 oz garlic-herb compound butter (cowboy butter), cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Scatter the sliced bell peppers and onions evenly over and around the roast, creating a bed of vegetables.
- Place the medallions of garlic-herb compound butter on top of the roast, distributing them evenly so they melt over the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 hours or on HIGH for 4-5 hours, until the pork is tender and shreds easily with a fork. Let it rest for 3 minutes before slicing.
- Once the pork is fork-tender, transfer it to a cutting board. Let it rest for at least 3 minutes, then shred it with two forks, discarding any large pieces of fat.
- Spoon the shredded pork and peppers over warm buttered egg noodles. Ladle some of the garlic-herb butter gravy from the slow cooker over the top.
