Tips for success
For the best flavor, let the roast cook on low rather than high. The low setting allows the collagen to break down slowly, resulting in a more tender and juicy texture.
If you're short on time, you can cook on high for 5-6 hours, but the meat may be slightly less fork-tender. Also, don't be tempted to add extra liquid—the beef and vegetables release plenty of moisture, and the butter provides richness.
To make cleanup easier, use a slow cooker liner. This also helps the roast cook evenly and prevents sticking. If you want a thicker gravy, remove the beef and vegetables, then whisk a tablespoon of cornstarch with two tablespoons of cold water into the remaining liquid and cook on high for 15 minutes until thickened.
For a deeper flavor, you can sear the roast in a hot skillet before adding it to the slow cooker, but it's not necessary.
Variations
- Spicy Chipotle Version: Add 2 chopped chipotle peppers in adobo sauce along with the vegetables for a smoky, spicy kick. Reduce the cowboy butter to 3 tablespoons and stir in 1 teaspoon of adobo sauce for extra heat. Serve with cooling sour cream or crema.
- Herb and Mustard Twist: Spread 2 tablespoons of Dijon mustard over the roast before adding the vegetables. Replace the cowboy butter with a mixture of 4 tablespoons softened butter, 1 minced garlic clove, and 1 teaspoon each of dried thyme and rosemary. This adds a tangy, herbaceous note.
- Mushroom and Onion Upgrade: Add 8 oz sliced cremini mushrooms along with the peppers and onions. The mushrooms will release extra moisture and add an earthy depth to the gravy. Increase the cowboy butter to 5 tablespoons for extra richness.
- Tomato-Balsamic Variation: Add 1/2 cup crushed tomatoes and 2 tablespoons balsamic vinegar to the slow cooker before cooking. This creates a slightly tangy, sweet gravy that pairs beautifully with the beef. Omit the green bell peppers and use only red and yellow for a sweeter flavor.

- Freezer
- Freeze the cooled roast and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Store leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop, making the leftovers even more delicious.
To reheat, place the desired amount in a saucepan over medium-low heat, adding a splash of beef broth or water if needed to loosen the gravy. Alternatively, reheat in the microwave in 30-second intervals, stirring occasionally, until hot.
This dish is perfect for making ahead. You can assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook on low as directed.
The cooking time may be slightly longer if starting from cold. You can also cook the roast fully, let it cool, and refrigerate for up to 3 days. Reheat gently on the stovetop or in the microwave.
Serving ideas
Serve the shredded beef and peppers over a bed of buttered egg noodles, mashed potatoes, or creamy polenta. The buttery gravy is perfect for soaking into starches. A side of crusty bread is great for mopping up every last bit. For a lighter option, serve over steamed rice or quinoa. The dish is hearty and satisfying on its own, but a simple green salad with a tangy vinaigrette can cut through the richness.
For a complete meal, add a side of roasted green beans or a crisp cucumber salad. The sweetness of the peppers and the savory butter complement many vegetables. If you have leftovers, use them to make sandwiches, tacos, or a hearty hash. The possibilities are endless, and the flavors are even better the next day.

Sweet Pepper Garlic Butter Bottom Round Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 2 bell peppers (red and green), sliced into thick strips
- 1 large sweet yellow onion, sliced
- 4 tbsp garlic-herb compound cowboy butter, cut into medallions
Instructions
- Place the beef bottom round roast in the center of the slow cooker insert. Scatter the sliced bell peppers and onion over and around the roast, tucking some underneath for even cooking.
- Place the medallions of garlic-herb compound cowboy butter evenly across the top of the roast. They will melt as the slow cooker heats, creating a rich, aromatic gravy.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the beef is fork-tender and easily shreds. The internal temperature of the roast should reach at least 145°F (63°C) for food safety, but the low, slow cooking will take it well beyond that for maximum tenderness. Let it rest for 3 minutes before slicing.
- Once the beef is tender, turn off the slow cooker and let the roast rest in the juices for at least 10 minutes. This allows the fibers to relax and reabsorb some of the flavorful liquid.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the peppers, onions, and buttery gravy. Serve hot over buttered egg noodles, if desired.
