Tips for success

For the best texture, let the pork rest for at least 3 minutes before shredding; this allows the juices to redistribute.

If you have time, let the shredded pork sit in the sauce for 10 to 15 minutes before serving to absorb more flavor.

To thicken the sauce, remove the meat and vegetables, then simmer the liquid on the stovetop over medium heat for 5 to 10 minutes. You can also mash some of the cooked peppers and onions into the sauce for extra body.

Variations

  • Spicy Kick: Add 1 to 2 chopped jalapeños or a teaspoon of red pepper flakes along with the peppers for a spicy twist. You can also use a spicy brown mustard instead of Dijon.
  • Smoky Flavor: Stir in 1 teaspoon of smoked paprika or a few drops of liquid smoke with the sour cream mixture to add a smoky depth that pairs well with the pork.
  • Herb Infusion: Add a few sprigs of fresh thyme or rosemary to the slow cooker with the vegetables. Remove the herb stems before shredding the pork.
  • Honey-Mustard: For a sweeter sauce, add 2 tablespoons of honey or maple syrup to the sour cream and mustard mixture. This balances the tang and makes it kid-friendly.

Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed to loosen the sauce.

This dish is ideal for meal prep. Cook it up to 2 days ahead, then refrigerate. The pork can be shredded and stored in the sauce; reheat gently before serving.

You can also assemble the raw ingredients in the slow cooker insert the night before and refrigerate, then cook the next day—just add 30 minutes to the cooking time.

Serving ideas

Serve the sweet pepper Dijon cream pork shoulder over steamed white rice, which soaks up the delicious sauce.

The creamy, tangy sauce is also wonderful over mashed potatoes or egg noodles. For a low-carb option, serve it on a bed of greens or in lettuce cups.

This pork also makes incredible sandwiches. Pile it onto soft buns with a little extra sauce and some pickled onions or coleslaw for crunch. The leftovers are just as good, if not better, the next day.

Frequently asked questions

Can this recipe be made with pork loin instead of shoulder?
Pork loin is leaner and will dry out during the long cooking time. For best results, stick with pork shoulder or Boston butt. If using pork loin, reduce the cooking time to about 4 to 5 hours on low and check for doneness early.
Can the cooking time be adjusted for a high setting?
Yes, this recipe can cook on high for 4 to 5 hours instead of 8 to 10 on low. The meat will still be tender, but the low setting yields a slightly more developed flavor and juicier texture.
Why is the sauce thin?
The sauce may be thin if the slow cooker has too much condensation or if the meat released a lot of liquid. To thicken, remove the meat and vegetables, then simmer the liquid on the stovetop until reduced.
Can this be made gluten-free?
Check the au jus and Dijon mustard labels for gluten. Many are gluten-free, but some may contain wheat. Use gluten-free versions to make the dish gluten-free. Serve with rice or gluten-free bread.
How should leftovers be reheated?
Reheat leftovers gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. Add a splash of broth or water if the sauce has thickened too much. Alternatively, microwave in 30-second intervals.

Sweet Pepper Dijon Cream Pork Shoulder

Prep 15 minCook 8 hTotal 8 h 15 minServes 8
Slow-cooked pork shoulder with sweet peppers and onions in a creamy Dijon sauce, served on a white plate

Ingredients

  • 4 lb boneless pork shoulder roast (Boston butt)
  • 2 bell peppers (red and green), sliced into thick strips
  • 1 large sweet yellow onion, sliced
  • 1 cup sour cream
  • 1/4 cup coarse whole-grain Dijon mustard
  • 1 cup beef au jus

Instructions

  1. Place the pork shoulder roast in the center of the slow cooker insert. Scatter the sliced bell peppers and onions over and around the roast, tucking some underneath.
  2. In a small bowl, stir together the sour cream and Dijon mustard. Dollop the mixture over the roast and vegetables, spreading it slightly.
  3. Pour the au jus along the side of the roast, not directly over the cream mixture, so the creamy topping stays in place.
  4. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and shreds easily. Let it rest for 3 minutes before slicing.
  5. Remove the roast to a cutting board. Let it rest for at least 3 minutes. Shred the pork with two forks, discarding any large fat pieces.
  6. Return the shredded pork to the slow cooker and stir gently to coat with the peppers, onions, and creamy pan sauce. Let it sit for a few minutes to meld.
Contains: milk, mustard
