Tips for success
For the best texture, do not rush the cooking process. The low-and-slow method is key to breaking down the pork's connective tissue.
If you are short on time, you can cook on HIGH for 4 to 5 hours, but the meat may be slightly less tender. Always let the pork rest before shredding, as this allows the juices to redistribute.
Toasting the brioche buns adds a pleasant contrast to the tender pork. Brush them lightly with melted butter and toast in a skillet or under the broiler until golden.
For a tangy twist, serve with pickled peppers or a dollop of horseradish sauce. Leftover pork can be stored in the refrigerator and used in tacos, quesadillas, or over rice.
Variations
- Spicy Kick: Add 2–3 sliced jalapeños or a teaspoon of chipotle powder along with the peppers for a smoky heat. Serve with pickled onions and a drizzle of hot sauce.
- Mushroom Gravy: Sauté 8 oz sliced mushrooms in butter and add them with the peppers. Use a mushroom gravy or stir in a tablespoon of soy sauce for umami depth.
- Herb-Infused: Add 2 sprigs of fresh thyme and 1 bay leaf with the gravy. Remove before shredding. Garnish with chopped parsley for brightness.
- BBQ Style: Replace half the brown gravy with your favorite barbecue sauce. Shred and toss with extra sauce, then serve on buns with coleslaw.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. Reheat gently, adding a splash of broth to maintain moisture.
- Freezer
- Freeze the shredded pork and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot. Or microwave in 1-minute intervals, stirring between.
Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed to loosen the gravy.
This recipe is ideal for meal prep. Cook the pork a day ahead, shred, and store in the refrigerator. Reheat in a slow cooker on LOW for 1 to 2 hours before serving. The brioche buns can be toasted in advance and kept in a sealed bag. The pork also freezes well for up to 3 months.
Serving ideas
Serve the shredded pork piled high on toasted brioche slider buns, with a spoonful of peppers and onions. Offer extra gravy on the side for dipping.
The sandwiches are satisfying on their own, but pair well with coleslaw, potato chips, or a crisp green salad. For a heartier meal, serve the pork over mashed potatoes or rice.
For a casual gathering, set up a slider bar with the pork, buns, and toppings like pickled jalapeños, sliced cheese, or crispy onions. The sweet-savory flavor profile is crowd-pleasing.
If there are leftovers, they make excellent tacos or burrito bowls. The dish is versatile and forgiving, so feel free to adjust the heat with a dash of hot sauce.

Sweet Pepper Brown Gravy Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 2 red and green bell peppers, sliced into strips
- 1 large sweet yellow onion, sliced
- 2 cups rich brown gravy (beef or pork)
- 4 tbsp unsalted butter, cut into pats
- 6 toasted brioche slider buns
Instructions
- Place the pork sirloin roast in the center of the slow cooker insert. Scatter the sliced bell peppers and onions over and around the roast, tucking some underneath for even cooking.
- Pour the brown gravy evenly over the roast and vegetables. Dot the top with the butter pats. The gravy should come about halfway up the sides of the roast.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, until the pork is fork-tender and shreds easily. The internal temperature should reach at least 145°F (63°C) for safety, but for shredding it will be much higher. Let it rest for 3 minutes before slicing.
- Once cooked, transfer the roast to a cutting board. Let it rest for at least 3 minutes, then shred with two forks. Return the shredded pork to the slow cooker and stir into the gravy and vegetables.
- Spoon the shredded pork and peppers onto toasted brioche slider buns. Use a slotted spoon to drain excess gravy, then spoon a little extra gravy over the top if desired.
