Tips for success
To get the most flavor from the vegetables, slice them thickly—about 1/2-inch strips—so they hold their shape during the long cooking time. If you prefer a smoother gravy, use an immersion blender to puree the cooked peppers and onions into the sauce before serving.
For a richer color and deeper flavor, add a tablespoon of tomato paste to the gravy before pouring it over the roast. This is an optional step that enhances the umami without changing the character of the dish.
When shredding the beef, do it directly in the slow cooker to keep all the juices. Use two forks to pull the meat apart, and remove any large chunks of fat. If the gravy is too thin, mix a slurry of cornstarch and cold water and stir it in, then cook on high for 10 minutes until thickened.
Conversely, if the gravy is too thick, add a splash of beef broth to reach the desired consistency. Taste and adjust seasoning with salt and pepper before serving.
Variations
- Spicy Chipotle Roast: Add 2 chopped chipotle peppers in adobo sauce and 1 teaspoon of the adobo to the gravy before pouring. The smokiness and heat will infuse the beef and peppers, giving the dish a bold, Southwestern kick.
- Mushroom and Thyme Roast: Replace half the bell peppers with 8 oz sliced cremini mushrooms and add 2 teaspoons fresh thyme leaves. The mushrooms add an earthy depth that pairs beautifully with the beef and gravy.
- Italian-Style Roast: Stir 1 teaspoon dried oregano, 1 teaspoon dried basil, and 1/2 teaspoon garlic powder into the gravy. Serve the shredded beef over soft polenta or with crusty Italian bread for a Mediterranean twist.
- Horseradish Cream Topping: Mix 1/2 cup sour cream with 2 tablespoons prepared horseradish and a pinch of salt. Dollop over the shredded beef on the buns before serving. The tangy cream cuts through the rich gravy beautifully.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of beef broth if needed to loosen the gravy.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating on the stovetop or in the microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a little beef broth if the gravy has thickened.
Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld and may even improve overnight. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the sauce. The beef can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
This dish is perfect for making ahead. Prepare the recipe as directed, then let it cool completely before refrigerating. The next day, reheat gently on the stovetop or in the slow cooker on low. The beef will be even more tender and the flavors more developed. It can also be frozen in portions for quick meals later. Just thaw and reheat, adding a little broth if the gravy has thickened.
Serving ideas
Serve the shredded beef on toasted brioche slider buns for a fun, hand-held meal. The buttery sweetness of the brioche complements the savory beef and sweet peppers. Pile the meat generously, spoon extra gravy over the top, and finish with the top bun.
For a heartier dinner, serve the roast over mashed potatoes, egg noodles, or polenta, with the gravy spooned over everything. A side of roasted vegetables or a simple green salad rounds out the meal.
For a low-carb option, serve the beef and peppers in lettuce cups or over cauliflower rice. The dish is also delicious as a filling for tacos or quesadillas—just add a sprinkle of shredded cheese and a dollop of sour cream.
Leftovers can be transformed into a hearty sandwich with melted provolone or Swiss cheese, or stirred into a pot of beans for a rich, meaty stew. The possibilities are endless, and the flavor is always satisfying.

Sweet Pepper Brown Gravy Bottom Round Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 2 red bell peppers, sliced into thick strips
- 2 green bell peppers, sliced into thick strips
- 2 sweet yellow onions, sliced
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
- 6 toasted brioche slider buns, for serving
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Scatter the sliced red and green bell peppers and the sliced sweet yellow onions over and around the roast, creating an even layer. The vegetables will soften and release their juices as the roast cooks, so there is no need to stir or brown the meat first.
- Pour the rich brown gravy evenly over the roast and vegetables. Dot the top of the roast with the pats of unsalted butter. The butter melts into the gravy during cooking, adding richness and helping to create a glossy, silky sauce.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the roast is fork-tender. The meat should shred easily with a fork and the peppers and onions should be very soft. The gravy will have deepened in color and flavor as the beef braises. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the cooking liquid for at least 3 minutes before shredding. This allows the juices to redistribute throughout the meat, keeping it moist and flavorful. Use tongs to transfer the roast to a cutting board if you prefer to shred it there, or shred it directly in the slow cooker.
- Shred the beef with two forks, removing any large pieces of fat. Return the shredded meat to the slow cooker and stir gently with the peppers, onions, and gravy until everything is well combined. The peppers and onions should be soft and sweet, having absorbed the rich beef flavor.
- Toast the brioche slider buns until golden. Pile a generous portion of the shredded beef and peppers onto the bottom half of each bun, then spoon extra gravy over the top. Set the top bun in place and serve immediately, with extra gravy on the side for dipping.
