Tips for success
For the most tender brisket, always cook on LOW if you have the time. The low heat slowly melts the collagen, resulting in meat that is succulent and shreds effortlessly.
If you're short on time, HIGH works, but the texture will be slightly less fork-tender. Also, don't skip the resting period after cooking—this allows the juices to redistribute throughout the meat, making it even more moist and flavorful.
To make the gravy extra glossy, you can stir in a tablespoon of butter just before serving. If you prefer a thicker sauce, remove the meat and vegetables, then simmer the liquid on the stovetop with a cornstarch slurry until it reaches your desired consistency.
For a deeper flavor, you can add a splash of Worcestershire sauce or a teaspoon of Dijon mustard to the gravy before cooking, though it's delicious as is.
Variations
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes with the peppers for a spicy version. Serve with pickled jalapeños on top for extra heat.
- Smoky Flavor: Stir 1 teaspoon of smoked paprika and 1/2 teaspoon of liquid smoke into the gravy before pouring. This adds a subtle barbecue-like smokiness.
- Mushroom Gravy: Sauté 8 oz sliced mushrooms in butter until browned, then add them to the slow cooker with the vegetables. This adds an earthy depth to the gravy.
- Beer Braised: Replace 1/2 cup of the gravy with a dark beer, such as stout or porter. The beer adds a malty richness that pairs beautifully with the beef.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water if the gravy is too thick.
Store leftover brisket in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much.
This recipe is perfect for making ahead. You can assemble the raw ingredients in the slow cooker insert and refrigerate overnight, then start cooking in the morning. Or, cook the brisket fully, let it cool, and refrigerate for up to 4 days. Reheat gently before serving. The brisket also freezes well (see freezer instructions).
Serving ideas
Serve the shredded brisket piled high on toasted brioche slider buns for a crowd-pleasing sandwich. The sweet peppers and onions add texture and flavor, and the gravy soaks into the bread.
For a heartier meal, spoon the brisket over creamy mashed potatoes or buttered egg noodles, letting the gravy act as a sauce. A side of roasted green beans or a crisp green salad balances the richness.
For a low-carb option, serve the brisket over cauliflower mash or alongside sautéed greens. You can also use it as a filling for tacos or burritos, topped with a dollop of sour cream and fresh cilantro.
The leftovers are incredibly versatile—use them in quesadillas, on nachos, or simply reheated with a side of crusty bread to soak up the gravy.

Sweet Pepper Brown Gravy Beef Brisket: Easy Slow Cooker

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 2 bell peppers (1 red, 1 green), sliced into thick strips
- 1 large sweet yellow onion, sliced
- 2 cups rich brown bone-broth gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the trimmed brisket flat in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and onions over and around the meat, covering it as evenly as possible.
- Pour the brown gravy over the meat and vegetables. Dot the top with the butter pats.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the brisket is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- When the brisket is tender, turn off the slow cooker. Let the meat rest in the liquid for at least 10 minutes before shredding. This allows the juices to redistribute.
- Using two forks, shred the brisket directly in the slow cooker, mixing it with the peppers and onions and coating everything in the gravy. Serve hot, piled onto toasted brioche slider buns or over mashed potatoes.
