Before you start

Before beginning the assembly process, organize all ingredients on your workspace. Ensure the pre-baked sugar-free chocolate cake layers are fully cooled to room temperature.

Toast the chopped pecans in a dry skillet over medium heat for three to five minutes until fragrant, then let them cool completely. Warm the sugar-free caramel sauce and sugar-free chocolate ganache slightly so they are pourable but not hot, which would melt the frosting.

Ingredients at a glance (5)
  • 2 sugar-free chocolate cake layers, store-bought or made ahead
  • 1 cup sugar-free caramel sauce, divided
  • 1 cup chopped pecans, toasted and divided
  • 1 cup sugar-free chocolate ganache, slightly warm
  • 1 1/2 cups sugar-free chocolate frosting, divided

Instructions

Base Layer Assembly

  1. Assemble the Base Layer
Place the first sugar-free chocolate cake layer on a serving platter. Spread half of the sugar-free chocolate frosting evenly over the top of the layer using an offset spatula.
Look for The frosting should cover the layer evenly in a smooth, flat sheet.
Tip Anchor the bottom cake layer to the plate with a tiny dab of frosting.
  2. Add Caramel and Pecans
Drizzle half of the warm sugar-free caramel sauce over the chocolate frosting, then sprinkle half of the toasted chopped pecans evenly across the caramel.
Look for The caramel should be distributed evenly without running off the edges.
Tip Press the pecans gently into the caramel to keep them in place.

The first cake layer is securely positioned on the serving plate, topped with a smooth layer of chocolate frosting, a generous drizzle of warm caramel, and a crunchy layer of toasted pecans.

The fillings should stay within the borders of the cake without spilling over the edges.

Cake Layering and Ganache Application

  1. Position the Second Layer
Place the second sugar-free chocolate cake layer directly on top of the pecan and caramel layer, pressing down very gently to secure it.
Look for The top layer should be perfectly centered and level.
Tip Look at the cake from eye level to ensure it is not leaning.
  2. Pour the Chocolate Ganache
Pour the silky sugar-free chocolate ganache over the top cake layer, spreading it gently to the edges so it covers the surface.
Look for The ganache should form a glossy, smooth coat on top.
Tip Make sure the ganache is warm but not hot, or it will melt the frosting below.

The second cake layer sits squarely on top of the first. The silky chocolate ganache is poured over the top, spreading smoothly toward the edges. The ganache should look glossy and semi-set, creating a rich, dark layer that clings beautifully to the moist cake.

Frosting and Final Decorating

  1. Frost the Sides
Spread the remaining sugar-free chocolate frosting around the sides of the cake to seal the layers and create a smooth exterior.
Look for The sides of the cake should be fully coated with no cake showing through.
Tip Use a rotating cake stand to get a perfectly smooth finish on the sides.
  2. Add the Final Garnish
Drizzle the remaining warm sugar-free caramel sauce over the top of the cake, then garnish with the remaining toasted pecans before chilling.
Look for The caramel should drizzle beautifully over the dark chocolate ganache.
Tip Chill the cake for thirty minutes before slicing to let the layers set.

The entire cake is fully enveloped in thick chocolate frosting, with additional caramel drizzled over the top and toasted pecans pressed into the surface. The frosting should be matte and thick, contrasting with the shiny caramel drizzle and the rough texture of the nuts.

Common mistakes

A common mistake is assembling the cake while the ingredients are at incorrect temperatures. If the cake layers are even slightly warm, the frosting will liquefy and slide off, causing the cake to collapse.

Similarly, if the caramel or ganache is too hot, it will melt the chocolate frosting layer beneath it. Always allow the cake layers to cool completely and ensure the caramel and ganache are only lukewarm before application.

How to tell it’s done

Since the cake layers are pre-baked, doneness in this recipe refers to the proper setting and chilling of the assembled cake. The cake is ready when the outer chocolate frosting is firm to the touch and the internal caramel and ganache layers have set.

This is achieved after chilling the cake in the refrigerator for at least thirty minutes, ensuring clean, beautiful slices when served.
