Before you start

Preheat the oven to 400°F (200°C) and position a rack in the middle. Line a large rimmed baking sheet (about 12x17 inches) with parchment paper. Measure out all the ingredients. Whisk the eggs, milk, oil, and salt in a large bowl. Add the flour and whisk until smooth.

The batter should be thin and pourable. Have the toppings ready—slice the sucuk if needed, drain the corn, and dice the peppers. Shred the cheese if not already shredded. This prep takes about 10 minutes and ensures smooth assembly.

Ingredients at a glance (10)
  • 2 large eggs
  • 2 cups whole milk
  • 3 tbsp vegetable oil
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 2 tbsp all-purpose flour
  • 6 oz sliced sucuk sausage
  • 1 cup sweet corn kernels
  • 1/2 cup diced red and green peppers
  • 2 cups shredded cheese (such as mozzarella or cheddar)

Instructions

Batter and Spread

  1. Make the crepe batter
In a large bowl, whisk together the eggs, milk, vegetable oil, and salt until well combined. Add the flour and whisk vigorously until the batter is smooth and free of lumps. The batter should be thin and pourable, similar to heavy cream.
Look for The batter is smooth and thin, with no dry flour pockets.
Tip Whisking in one direction helps prevent lumps. If any remain, strain the batter through a fine-mesh sieve.
  2. Pour and spread the batter
Line a large rimmed baking sheet (about 12x17 inches) with parchment paper. Pour the batter onto the center of the sheet, then tilt the pan in all directions so the batter spreads evenly into a thin, uniform layer covering the entire bottom. Tap the pan gently on the counter to release any air bubbles.
Look for The batter coats the entire pan in a thin, even layer.
Tip If the batter pools in spots, tilt the pan again to redistribute. The layer should be about 1/8 inch thick.

The batter is smooth and thin, with no lumps. When poured onto the baking sheet, it spreads easily into a uniform layer that covers the entire bottom. The pan should be tilted gently to encourage even distribution.

The batter layer should be about 1/8 inch thick, translucent enough to see the parchment through in spots. There should be no puddles or dry areas. The batter should look like a very thin pancake batter, ready to be topped.

Top and Bake

  1. Add the toppings
Scatter the shredded cheese evenly over the batter. Arrange the sliced sucuk sausage pieces on top, then sprinkle the sweet corn kernels and diced red and green peppers evenly across the surface.
Look for The toppings are evenly distributed, leaving some cheese visible.
Tip For a more even bake, keep the toppings in a single layer. Overcrowding can make the top soggy.
  2. Bake until bubbly
Place the baking sheet in an oven preheated to 400°F (200°C). Bake for 15 minutes, or until the edges are golden brown and the cheese is melted and bubbly. The crepe crust should be set and slightly crisp at the edges.
Look for The cheese is bubbling and the edges are golden brown.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the pan halfway through baking for even browning. If the top browns too quickly, tent loosely with foil.

The toppings are evenly scattered over the batter, with the cheese covering most of the surface. The sucuk slices are spaced out, and the corn and peppers are distributed without clumping. As it bakes, the cheese melts and bubbles, and the edges start to brown. The kitchen smells of toasty cheese and spiced sausage. The surface should be bubbly and golden after 15 minutes, with the edges crisp and slightly darker.

Slice and Serve

  1. Cool and slice into squares
Remove the baking sheet from the oven and let the crepe cool on a wire rack for 5 minutes. Use a pizza wheel or sharp knife to slice into rectangular party squares. Lift a slice to see the tender crepe crust and stringy melted cheese. Serve warm.
Look for The squares hold their shape when sliced, with melted cheese stretching.
Tip For clean cuts, wipe the pizza wheel between slices. Serve immediately for the best texture.

After cooling for 5 minutes, the squares are firm enough to slice cleanly. The pizza wheel glides through the crust without tearing. When you lift a square, you see the tender crepe crust on the bottom, the melted cheese stretching in strings, and the toppings clinging to the cheese. The squares are warm, with a crisp edge and a soft, tender center. They hold their shape when picked up but are best eaten warm.

Common mistakes

One common mistake is overmixing the batter, which can develop too much gluten and make the crust tough. Mix just until smooth. Another issue is pouring the batter too thickly; if the layer is too thick, the center may not cook through and the squares will be doughy.

Use a large baking sheet to keep the batter thin. Also, avoid adding too many toppings, which can weigh down the crust and prevent even browning. Finally, do not skip the parchment paper—it prevents sticking and makes lifting out the squares easy.

How to tell it’s done

The squares are done when the edges are golden brown and the cheese is fully melted and bubbly. The crepe crust should be set and firm to the touch in the center. Insert a knife into the center—it should come out clean.

For food safety, the eggs in the batter must reach 160°F (71°C). Because the batter is thin and baked at high heat, the center will reach this temperature quickly. Let the tray cool for 5 minutes before slicing to allow the squares to set.

  • Egg dishes: 160°F (71°C) in the thickest part
  • Ground meat: 160°F (71°C) in the thickest part
