Before you start

Preheat the oven to 400°F (200°C). Prepare the zucchini by slicing off the tops and hollowing them out with a serrated knife and spoon; reserve the flesh for another use or discard. Grate the onion and chop the parsley.

Rinse the rice under cold water until the water runs clear. Measure out the remaining ingredients. Have a round baking dish ready, preferably glass or ceramic, that will hold the zucchini snugly in a single layer.

Ingredients at a glance (14)
  • 6 round globe zucchinis (topak kabak)
  • 300 g ground beef
  • 1 cup cooked chickpeas
  • 1 cup rinsed white rice
  • 1 grated onion
  • chopped parsley, to taste
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • salt, to taste
  • black pepper, to taste
  • 2 cups hot chicken broth
  • 1 tbsp tomato paste
  • 2 tbsp olive oil

Instructions

Prep and Filling

  1. Prep the Zucchini and Filling
Slice off the tops of the round zucchinis and hollow out the centers using a serrated paring knife and a spoon, reserving the tender flesh. In a bowl, combine the ground beef, cooked chickpeas, rinsed rice, grated onion, chopped parsley, tomato paste, olive oil, cumin, salt, and black pepper. Mix until well combined.
Look for The zucchini shells are clean and intact, and the filling is evenly mixed.
Tip Use a small spoon to scrape the flesh without breaking the skin.
  2. Score the Zucchini Skin
Using a fork, score the outside skin of each hollowed zucchini. This creates a decorative pattern and helps the zucchini absorb the cooking liquid.
Look for The skin has light fork marks but is not cut through.
Tip Run the fork gently to avoid piercing the flesh.

The zucchini are hollowed with clean edges, and the filling is well combined with no dry spots. The mixture should be fragrant with cumin and parsley. The zucchini shells are scored and ready to be filled. This phase sets the stage for even cooking and balanced flavor.

Baking

  1. Stuff the Zucchini
Generously pack each hollowed zucchini cavity with the beef and chickpea stuffing, pressing gently to fill completely.
Look for The cavities are full but not overflowing.
Tip Do not overpack; the rice will expand during baking.
  2. Arrange in Baking Dish
Arrange the stuffed round zucchinis upright in a round glass baking dish. They should fit snugly to stay upright during baking.
Look for The zucchinis are standing upright and stable.
Tip If they wobble, trim a thin slice from the bottom to level.
  3. Make the Tomato Broth
Whisk together the hot chicken broth, tomato paste, and olive oil in a small bowl until the tomato paste is fully dissolved.
Look for The broth is smooth and reddish-orange.
Tip Use hot broth to help the tomato paste dissolve easily.
  4. Add Broth and Cover
Ladle the tomato broth over the stuffed zucchinis, then cover the dish with a lid or foil.
Look for The broth reaches about halfway up the zucchinis.
Tip Ensure the cover is tight to trap steam.
  5. Bake the Zucchini
Bake in the preheated oven at 200°C (400°F) for 40 minutes, until the zucchini are tender and the filling is cooked through.
Look for The zucchini are fork-tender and the filling is firm.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Check at 35 minutes; baking time may vary with oven.

The baking dish is filled with the stuffed zucchini and the tomato broth. The liquid should come about halfway up the sides. The dish is covered and placed in the oven.

As it bakes, the kitchen fills with the aroma of tomatoes, beef, and spices. The zucchini will soften and the filling will firm up.

Resting and Serving

  1. Rest Before Serving
Remove the dish from the oven and let it rest for 5 minutes before serving. The filling will set slightly, making it easier to slice.
Look for The dish has stopped bubbling and is slightly cooled.
Tip Resting also prevents the filling from crumbling.
  2. Slice and Serve
Slice each stuffed zucchini in half to reveal the hearty filling, and serve with the pan juices spooned over the top.
Look for The filling is moist and the zucchini is tender.
Tip Use a sharp knife for clean slices.

After baking, the dish rests for a few minutes, allowing the juices to settle. The zucchini are tender and the filling is set. When sliced, the interior shows plump grains of rice, chickpeas, and juicy beef. The pan juices are spooned over the top for extra flavor.

Common mistakes

Avoid overstuffing the zucchini, as the rice expands during cooking and may push the filling out. Also, don't skip scoring the skin—it helps the zucchini cook evenly and absorb flavor.

Make sure the baking dish is covered tightly; if the lid isn't snug, the top may dry out. Finally, resist the urge to peek too often during baking, as that lets steam escape and increases cooking time.

How to tell it’s done

The dish is done when the zucchini are tender when pierced with a fork and the filling is cooked through. The internal temperature of the ground beef should reach 160°F (71°C).

The rice should be fully cooked and tender, and the broth should be slightly reduced. Let the dish rest for 5 minutes before serving to allow the filling to set.

  • Ground meat: 160°F (71°C) in the thickest part
