Tips for success
To make the zucchini easier to hollow, use a melon baller or a small spoon. Scoop out the flesh in a circular motion, leaving a 1/2-inch thick wall. If the zucchini wobble, slice a thin piece off the bottom to create a flat surface. This helps them stand upright in the pot and cook evenly.
For a richer flavor, brown the ground beef briefly in a skillet before mixing it with the other filling ingredients. This step is optional but adds depth.
If you do this, reduce the braising time by about 10 minutes, as the beef will already be partially cooked. Always check the internal temperature reaches 160°F (71°C) before serving.
Variations
- Lamb and Pine Nuts: Replace the ground beef with ground lamb and add 1/4 cup toasted pine nuts to the filling. The pine nuts add a rich, buttery crunch that complements the lamb and spices beautifully.
- Vegetarian with Lentils: Swap the beef for 1 cup cooked brown lentils and use vegetable broth in the sauce. Increase the rice to 3/4 cup and add a little extra olive oil to keep the filling moist.
- Spicy Harissa: Stir 1-2 tablespoons of harissa paste into the tomato broth for a spicy, smoky kick. Adjust the amount to your heat preference. This adds a North African flair to the dish.
- Cheese-Topped: After braising, sprinkle each zucchini with 2 tablespoons of crumbled feta or shredded mozzarella, then return to the oven for 5 minutes until melted and bubbly. This adds a creamy, salty finish.

Store leftover stuffed zucchini in an airtight container in the refrigerator for up to 3 days. The flavors will meld and deepen overnight.
Reheat gently in the microwave or in a covered pot on the stovetop with a splash of water or broth to keep them moist. The zucchini will soften further upon reheating, so handle them carefully.
The stuffed zucchini can be assembled up to 24 hours ahead. Prepare the zucchini and filling, stuff them, and place them in the pot with the broth. Cover and refrigerate.
When ready to cook, bring the pot to a simmer on the stovetop, then transfer to the oven and bake as directed, adding 10 minutes to the cooking time to account for the cold start.
Serving ideas
Serve the stuffed zucchini hot, with a generous spoonful of the tomato gravy poured over each one. The dish pairs well with crusty bread or a simple green salad dressed with lemon and olive oil. For a heartier meal, serve alongside rice or couscous to soak up the delicious sauce.
These stuffed zucchini are a complete meal on their own, but they also work as a side dish for roasted meat or fish.
The flavors are Mediterranean-inspired, so they go nicely with grilled lamb, chicken, or a simple yogurt sauce. Garnish with extra fresh herbs, if desired, for a pop of color and freshness.

Stuffed Round Zucchini with Beef and Chickpeas

Ingredients
- 4 round (8-ball) zucchini
- 300 g ground beef
- 1/2 cup uncooked white rice
- 1 cup cooked chickpeas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 1/2 cups tomato sauce
- 1 cup beef broth
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground cinnamon
- 1/4 tsp ground allspice
Instructions
- Slice the top cap off each round zucchini and reserve the caps. Use a melon baller or small spoon to scoop out the flesh, leaving a 1/2-inch thick shell. Chop the scooped-out flesh finely and set aside.
- In a mixing bowl, combine the ground beef, chopped zucchini flesh, rice, chickpeas, onion, garlic, parsley, mint, salt, black pepper, cinnamon, and allspice. Mix with your hands or a spoon until well blended.
- Spoon the filling into the hollowed zucchini shells, packing it gently but firmly. Do not overfill; leave a little room for the rice to expand. Replace the caps on top.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the tomato paste and cook for 1 minute, stirring. Pour in the tomato sauce and beef broth, then bring to a simmer.
- Carefully place the stuffed zucchini into the simmering broth. The liquid should come about halfway up the sides of the zucchini. If needed, add a little water to reach the right level.
- Cover the pot and transfer to an oven preheated to 375°F (190°C). Braise for 45 minutes, until the zucchini are tender and the filling is cooked through.
- Remove the pot from the oven and let it rest for 5 minutes. The filling must reach 160°F (71°C) throughout. Serve the zucchini hot, spooning the rich tomato gravy over each portion.
