Tips for success
For the best texture, do not skip the salting step. It draws out excess water and prevents the eggplants from becoming mushy.
Also, brush the slices generously with olive oil to promote browning and flavor. Use a pastry brush for even coverage.
When pressing the center of the roasted eggplants, use a fork to create a deep well without tearing the flesh. This helps the filling stay in place.
If you prefer a spicier dish, leave the seeds in the green chilies or add a pinch of cayenne to the beef mixture.
Variations
- Vegetarian Lentil Filling: Replace the ground beef with 2 cups cooked brown lentils or a mixture of mushrooms and walnuts. Sauté with the onion and chilies, then season with the pastes. Proceed as directed, baking until the filling is hot and the sauce bubbles.
- Cheesy Topping: After filling the eggplants, sprinkle each with 2 tablespoons of crumbled feta or shredded mozzarella before baking. The cheese will melt and become golden, adding a creamy, savory layer. Adjust baking time to ensure the cheese is bubbly.
- Spicy Harissa Twist: Stir 1-2 tablespoons of harissa paste into the beef filling for an extra kick. The harissa adds a smoky, spicy depth that complements the eggplant. Reduce the green chilies if you prefer a milder heat.
- Herbed Yogurt Sauce: Serve the stuffed eggplants with a dollop of yogurt mixed with chopped mint, garlic, and a squeeze of lemon. This cooling sauce balances the richness of the beef and adds a fresh, tangy contrast.

Serving ideas
Serve the stuffed eggplants hot from the oven, with a generous spoonful of the tomato sauce. They pair beautifully with fluffy rice, quinoa, or crusty bread to soak up the sauce. A simple green salad with a lemon vinaigrette adds freshness.
For a complete meal, serve alongside roasted vegetables or a dollop of yogurt (if not dairy-free).
The dish is hearty enough to stand alone, but the sauce is so good you'll want something to mop it up. Garnish with fresh herbs like parsley or mint for brightness.

Stuffed Eggplant with Spiced Beef and Tomato Sauce

Ingredients
- 4 large round eggplants
- 2 tbsp salt (for soaking)
- 3 tbsp extra virgin olive oil
- 500 g lean ground beef
- 1 large yellow onion, finely diced
- 5 green chili peppers, sliced
- 2 tbsp tomato paste (divided)
- 1 tbsp red pepper paste
- 1 cup hot water
- 1 fresh tomato wedges
- 1 green pepper strips
Instructions
- Slice the eggplants crosswise into thick rounds. Score the cut sides in a deep criss-cross pattern, being careful not to cut through the skin. Soak the slices in a large bowl of cold water with the salt for 10 minutes. Drain, pat dry with paper towels, and arrange on a baking sheet. Brush both sides with the olive oil.
- Heat the oven to 400°F (200°C). Roast the eggplant slices for 15 minutes, until they are tender and lightly browned. Remove from the oven and let cool slightly.
- While the eggplants roast, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Add the diced onion and sliced green chilies; cook until the onion is translucent. Stir in 1 tbsp of the tomato paste and the red pepper paste. Cook for 2 minutes, until fragrant.
- In a small bowl, dissolve the remaining 1 tbsp tomato paste in the hot water. Stir until smooth. Set aside.
- Use a fork to press down the center of each roasted eggplant slice, creating a hollow pocket. Spoon the beef mixture generously into each pocket, mounding it slightly. Arrange the stuffed eggplants in a baking dish. Pour the tomato sauce around the base of the eggplants, not over the tops.
- Top each stuffed eggplant with a few fresh tomato wedges and green pepper strips. Bake in the preheated oven at 400°F (200°C) for 15 minutes, until the sauce is bubbling vigorously and the tops are lightly charred.
- Carefully lift each stuffed eggplant onto a plate. Spoon some of the hot tomato sauce over the top. Serve immediately, while tender and warm.
