Before you start

Before you begin, ensure your slow cooker is clean and placed on a stable surface away from the edge of the counter. Prepare your ingredients by draining the pineapple chunks if they are in syrup, as excess liquid can make the sauce too thin.

If you are using fresh green onions, wash them thoroughly and slice them thinly on a bias to maximize the surface area for the garnish. Have your tongs ready near the slow cooker to make the transfer of the cooked chicken simple and safe once the cooking cycle is complete.

Ingredients at a glance (5)
  • 2 lb chicken thighs, boneless and skinless
  • 2 cups pineapple chunks, drained
  • 1 cup teriyaki glaze
  • 2 tbsp green onions, thinly sliced
  • 1 tsp sesame seeds

Instructions

Initial Assembly

  1. Prepare the Slow Cooker
Place the chicken thighs into the basin of the slow cooker. Pour the teriyaki glaze over the chicken, ensuring each piece is well-coated to develop the signature sticky texture during the slow cooking process.
Look for The chicken should be evenly coated in the sauce.
Tip Layering the chicken helps the sauce distribute more effectively.

At the end of this phase, the chicken should be completely submerged or well-coated in the teriyaki glaze. The slow cooker should be set to the low setting, which provides the gentle heat necessary for the chicken to cook through without toughening. Ensure the lid is securely closed to trap the steam and heat, which is vital for the slow cooking process to work effectively. There should be no signs of leakage around the lid rim.

Slow Cooking

  1. Add Pineapple and Cook
Add the pineapple chunks to the slow cooker on top of the chicken. Cover and cook on low for 4 hours until the chicken is tender and fully cooked through, reaching an internal temperature of 165°F (74°C).
Look for The chicken appears tender and the sauce has thickened.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use canned pineapple in juice for a sweeter sauce profile.

During this phase, the kitchen will begin to fill with the savory aroma of teriyaki and the sweet scent of pineapple. The chicken will become very soft and tender, and the sauce will begin to thicken as the juices from the pineapple incorporate into the glaze. Check the consistency of the sauce; if it appears too thin, you can leave the lid off for the final 15 minutes of cooking to allow some of the moisture to evaporate.

Final Garnish

  1. Garnish and Serve
Carefully remove the chicken and pineapple using tongs. Transfer to a serving plate and sprinkle with sliced green onions and sesame seeds. Let the chicken rest for 5 minutes before serving to ensure the juices redistribute.
Look for The garnish is evenly distributed over the hot chicken.
Tip Serving immediately while steaming hot enhances the flavor.

The chicken should now be deeply glazed, tender, and steaming hot. When you lift a piece with your tongs, it should almost fall apart, which is a sign of perfect slow cooking.

Before serving, verify that the garnish of green onions and sesame seeds is distributed evenly. The dish is ready to be plated and served immediately, allowing the residual heat to keep the chicken moist while you prepare any side dishes like steamed rice or vegetables.

Common mistakes

A common mistake is adding too much liquid at the beginning. The pineapple and the chicken will release their own juices during the cooking process, so the sauce will naturally become more fluid.

Avoid lifting the lid during the cooking process, as this releases heat and moisture, significantly increasing the required cooking time. Additionally, ensure you do not use frozen chicken, as it may not reach a safe internal temperature quickly enough to prevent bacterial growth during the slow cook.

How to tell it’s done

The chicken is fully cooked when it is fork-tender, meaning it pulls apart easily with minimal pressure. Using an instant-read thermometer is the most reliable way to ensure safety. Insert the probe into the thickest part of the largest chicken thigh, ensuring you are not touching the bone if present.

The internal temperature must reach 165°F (74°C). At this stage, the sauce should appear glossy and thick, clinging to the meat rather than pooling at the bottom of the slow cooker.

  • Poultry: 165°F (74°C) in the thickest part
