Tips for success
For a deeper caramelization, you can transfer the cooked chicken and sauce to a baking sheet and broil for 2–3 minutes until edges char slightly.
This adds a smoky note that complements the sweet-heat glaze. Watch closely to prevent burning. This step is optional but gives an extra layer of flavor if you have the time.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the sauce after shredding. Cook on high for 5–10 minutes until it thickens.
For a thinner sauce, leave as is. Adjust the amount of jalapeño based on your heat preference—start with less and add more at the end if needed.
Variations
- Spicy Mango Version: Replace the pineapple with diced mango and use habanero slices instead of jalapeño for a tropical, fiery twist. Reduce the honey slightly to balance the extra heat. Serve over coconut rice for a Caribbean feel.
- Garlic-Ginger Version: Add 1 tablespoon grated fresh ginger along with the garlic. The ginger adds a warm, aromatic note that pairs beautifully with the soy and honey. It's a simple change that elevates the depth of flavor.
- Low-Sodium Version: Use low-sodium soy sauce and reduce the salt to 1/4 teaspoon. The natural saltiness from the soy will still season the dish well. This makes the recipe suitable for those watching their sodium intake.
- BBQ Fusion Version: Swap the soy sauce for barbecue sauce and add a teaspoon of smoked paprika. The result is a smoky, sweet, and tangy sauce that's perfect for serving on slider buns. Skip the rice and serve as sandwiches.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or broth to loosen the sauce if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 30-second bursts, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will continue to absorb the sauce, so it may be even more flavorful the next day. Reheat gently in the microwave or on the stovetop with a splash of water to loosen the sauce.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
This makes it a true dump-and-go meal for busy days. If you do this, add 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve the chicken over steamed basmati rice to soak up the delicious sauce. The rice's neutral flavor balances the sweet and spicy glaze. For a low-carb option, serve over cauliflower rice or alongside roasted vegetables. A side of sautéed greens or a simple cucumber salad adds freshness and crunch.
Garnish with extra jalapeño slices, chopped cilantro, or a squeeze of lime for brightness. If you like, sprinkle with sesame seeds for a nutty finish.
This dish is also great in tacos or on top of nachos—the sauce makes everything better. Enjoy it warm, with the sauce spooned generously over each serving.

Slow Cooker Jalapeño Lime Honey Soy Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 1 cup pineapple tidbits, drained
- 1/2 cup fresh jalapeño rings (seeded if desired)
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked basmati rice, for serving
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the drained pineapple tidbits and jalapeño rings over the chicken.
- In a small bowl, whisk together the honey, soy sauce, lime juice, garlic, salt, and pepper until well combined.
- Pour the glaze evenly over the chicken and fruit. Cover the slow cooker and cook on low for 4 hours or on high for 2 hours, until the chicken is tender and cooked through.
- Once the chicken is cooked through, use two forks to shred the thighs directly in the slow cooker. Stir the chicken into the sauce so it is fully coated.
- If the sauce seems thin, leave the slow cooker on high with the lid off for 10–15 minutes to reduce and thicken. Stir occasionally.
- Spoon the hot rice onto plates or into bowls, then top with the chicken and sauce. Serve immediately.
