Before you start

Before you begin, ensure that your oven is preheated to 375°F (190°C) and your loaf pan is clean and ready. Having your basting brush and a small bowl for the glaze ready will make the transition from the initial baking phase to the glazing phase much smoother and more efficient.

Ensure the meatloaf mixture is at room temperature for no more than 30 minutes before it goes into the oven to ensure even cooking throughout.

Ingredients at a glance (3)
  • 2 lb prepared meatloaf mixture
  • 1/2 cup BBQ sauce
  • 2 tbsp honey

Instructions

Shaping the loaf

  1. Prepare the meatloaf
Preheat your oven to 375°F (190°C). Place the prepared meatloaf mixture into a 9x5 inch metal loaf pan, pressing it down gently to ensure it fills the corners evenly. Ensure the meat is shaped into a uniform loaf to promote even cooking throughout the baking process.
Look for The meatloaf should be shaped into an even, compact loaf.
Tip Avoid packing the meat too tightly to keep the texture tender.

At the end of this phase, the meatloaf should be neatly shaped in the pan, filling it evenly. It should be ready for the oven, with the surface smooth and prepared to receive the glaze later. Check that the loaf is centered in the pan to ensure even heat distribution during the initial baking period, which is crucial for a consistent texture.

Baking and glazing

  1. Bake and glaze
Place the loaf pan in the oven and bake for 45 minutes. While the meatloaf bakes, whisk together the BBQ sauce and honey in a small bowl. After 45 minutes, remove the pan from the oven and brush the honey BBQ glaze generously over the entire top and sides of the loaf. Return to the oven for another 15 to 20 minutes until the center reaches 160°F (71°C).
Look for The glaze should become sticky and deeply colored.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the glaze covers the edges for a caramelized finish.

By the end of this phase, the meatloaf will have developed a nice structure, and the glaze will have transformed into a rich, sticky coating. The kitchen should smell savory and slightly sweet.

Ensure that the glaze is applied evenly over the top and sides for the best finish. The internal temperature must be confirmed at 160°F (71°C) to ensure safety and quality.

Resting and slicing

  1. Rest and serve
Once cooked, remove the meatloaf from the oven and let it rest in the pan for at least 10 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring every slice remains moist and tender. Carefully lift the meatloaf from the pan using a spatula, slice into thick portions, and serve immediately while warm.
Look for The meatloaf should hold its shape firmly after resting.
Tip If juices accumulate in the pan, use them to drizzle over the slices.

After resting, the meatloaf will have firmed up significantly, making it much easier to slice without crumbling. Check that the juices have been absorbed back into the meat. When you slice it, the pieces should hold together perfectly, revealing a moist, tender interior that is ready to be served. The texture should be consistent from the crust to the center.

Common mistakes

A common mistake is failing to let the meatloaf rest; cutting into it immediately causes the juices to run out, leaving the meat dry. Always allow at least 10 minutes for the loaf to set.

Another error is applying the glaze too early, which causes the sugars to burn and become bitter. Finally, do not skip the thermometer, as guessing the doneness often leads to overcooking and a dry end result that lacks the desired juicy texture.

How to tell it’s done

The meatloaf is fully cooked when the center reaches an internal temperature of 160°F (71°C). You can check this by inserting a meat thermometer into the thickest part of the center.

Visually, the glaze should be dark, sticky, and bubbling slightly at the edges of the pan. The meat should feel firm to the touch, and when you slice into it, the interior should appear moist and uniform without any signs of remaining pink juices.

  • Ground meat: 160°F (71°C) in the thickest part
