Before you start

Before beginning, ensure your slow cooker is clean and positioned on a level, heat-resistant surface. No complex preparation is required for this dish. Simply measure out your ingredients and ensure the chicken thighs are properly thawed if they were previously frozen.

Have two sturdy forks ready for the shredding stage, which will be the final step in your cooking process. Because this is a dump-and-go recipe, having all ingredients pre-measured before you start ensures the assembly process is seamless and efficient.

Ingredients at a glance (6)
  • 2 1/2 lb chicken thighs
  • 1 12-oz can Coca-Cola
  • 1 cup ketchup
  • 1/2 cup dark brown sugar
  • 1 tsp garlic powder
  • diced green onions, for serving

Instructions

Initial Assembly

  1. Layering the ingredients
Place the chicken thighs into the basin of a 6-quart slow cooker. Pour the Coca-Cola, ketchup, dark brown sugar, and garlic powder over the chicken, ensuring everything is distributed evenly to facilitate a consistent glaze during the cooking process.
Look for all ingredients are in the slow cooker
Tip Ensure the chicken is arranged in a single layer if possible to promote even cooking.

At this phase, verify that all ingredients are well-distributed within the basin. The chicken should be nestled among the liquids and seasonings. Ensure the lid is securely placed to begin the slow, steady process of cooking. There should be no need for additional liquid, as the chicken will release its own juices during the initial heating cycle.

Slow Reduction

  1. Slow cooking the chicken
Secure the lid onto the slow cooker. Set the device to cook on HIGH for 3.5 hours. During this time, the soda and sugar will reduce into a thick, mahogany-colored glaze while the chicken becomes tender enough to shred.
Look for the liquid has reduced to a thick, glossy glaze
Tip Avoid lifting the lid during the cooking process, as this releases essential heat and steam.

During the mid-cooking phase, the kitchen will begin to fill with the sweet, savory aroma of the BBQ glaze. Check that the edges of the pot are not accumulating burnt sugar.

The liquid level will slowly decrease as it thickens. If the sauce appears to be bubbling aggressively, you may slightly reduce the heat setting on some models, though HIGH is standard for this reduction.

Shredding and Serving

  1. Shredding and finishing
Once the cooking time is complete, verify the chicken has reached an internal temperature of 165°F (74°C). Use two forks to shred the chicken directly in the pot, coating it thoroughly with the reduced cola glaze. Serve immediately over rice or slider buns, topped with diced green onions.
Look for the chicken shreds easily with two forks
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, leave the lid off and cook for an additional 15 minutes to reduce further.

At the final checkpoint, the chicken should be falling off the bone or easily breaking into chunks. The sauce should have achieved a dark, mahogany color. After verifying the safe internal temperature, use your forks to incorporate the sauce into the meat. The final texture should be uniform, sticky, and ready to be served immediately while hot.

Common mistakes

A common mistake is using a slow cooker that is too large, which can cause the sauce to evaporate too quickly or, conversely, too small, which prevents the sauce from reducing into a proper glaze.

Another error is lifting the lid frequently to check on the progress; this disrupts the internal temperature and significantly extends the cooking time. Finally, ensure the chicken is not overcrowded, as this can lead to uneven cooking and prevent the sauce from properly coating every piece.

How to tell it’s done

The chicken is considered done when it reaches an internal temperature of 165°F (74°C) as measured by a food thermometer inserted into the thickest part of the meat.

At this stage, the chicken should be incredibly tender and easily pull apart with the pressure of a fork. The sauce should be reduced to a glossy, sticky consistency that coats the back of a spoon, indicating that the sugars have caramelized correctly without burning.

  • Poultry: 165°F (74°C) in the thickest part
