Tips for success

For the most flavorful result, use a good-quality balsamic vinegar and low-sodium soy sauce. The balsamic's acidity balances the sweetness of the brown sugar, while the soy provides umami.

If you prefer a thicker glaze, you can transfer the sauce to a small saucepan and simmer on the stovetop for a few minutes after removing the chicken. This reduces the sauce and intensifies its flavor.

Toasting sesame seeds is quick and easy: place them in a dry skillet over medium heat and stir frequently until golden and fragrant, about 2 to 3 minutes. Watch carefully because they burn quickly.

Scallions should be sliced thinly on the diagonal for the best appearance. If you have leftovers, store them separately from the sauce to keep the chicken from becoming too soggy when reheated.

Variations

  • Spicy Sriracha: Add 1 to 2 tablespoons of sriracha or your favorite hot sauce to the glaze for a spicy kick. Adjust the brown sugar to balance heat. Finish with extra sesame seeds and a drizzle of sriracha.
  • Orange Soy Glaze: Replace the balsamic vinegar with 1/3 cup fresh orange juice and add 1 tablespoon of orange zest. This bright, citrusy version pairs well with ginger. Reduce the brown sugar slightly if the orange is very sweet.
  • Honey Garlic: Swap the brown sugar for 1/2 cup honey and reduce the soy sauce to 1/3 cup. Add an extra 2 cloves of minced garlic. The result is a sweeter, more floral glaze that caramelizes beautifully.
  • Maple Dijon: Use 1/2 cup maple syrup instead of brown sugar and add 2 tablespoons of Dijon mustard. The mustard adds tang and depth, while maple provides a distinct autumnal sweetness. Reduce salt by using low-sodium soy sauce.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of water when reheating.
Freezer
Freeze cooked drumsticks in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over medium-low heat or in the microwave until steaming. Add a little water or broth to loosen the sauce.

Store leftover drumsticks in an airtight container in the refrigerator for up to 4 days. The sauce will thicken further when chilled; you can loosen it with a splash of water or chicken broth when reheating. Keep the sesame seeds and scallions separate if possible, as they lose their texture when stored with the chicken.

This recipe is excellent for meal prep. You can assemble the drumsticks with the sauce in the slow cooker insert and refrigerate overnight, then start cooking the next day.

Alternatively, cook the full recipe, cool, and refrigerate for up to 4 days. Reheat gently in a saucepan or microwave until heated through. The glaze may need a little water to restore its pourable consistency.

Serving ideas

Serve these drumsticks hot, straight from the slow cooker. They pair beautifully with steamed jasmine rice, which soaks up the extra glaze. A side of roasted broccoli or green beans adds color and a fresh contrast. For a heartier meal, serve with mashed potatoes or crusty bread to mop up the sauce.

For a casual gathering, arrange the drumsticks on a large platter and let guests help themselves. Provide plenty of napkins, as the glaze is sticky.

You can also cut the meat off the bone and serve it over rice or in tacos for a different presentation. Garnish with extra sesame seeds and scallions just before serving to keep them vibrant.

Frequently asked questions

Can this recipe be made with chicken thighs instead of drumsticks?
Yes, boneless or bone-in chicken thighs work well. Bone-in thighs may need the same 3.5 hours on high, while boneless thighs may cook faster, around 2.5 to 3 hours. Always check that the internal temperature reaches 165°F (74°C).
Why is the sauce not thickening?
The sauce may not reduce enough if the slow cooker is on a low setting or if the lid is kept on. Cook uncovered for the last 20 to 30 minutes to help it thicken. Also, ensure the brown sugar is fully dissolved and the mixture is simmering, not just warm.
Can this recipe be doubled?
Yes, you can double the ingredients if you have a large slow cooker (at least 8 quarts). Keep the drumsticks in a single layer if possible, and increase the cooking time by about 30 minutes. Check doneness with a thermometer.
How can the dish be made gluten-free?
Use tamari or coconut aminos instead of soy sauce. Ensure the balsamic vinegar is gluten-free (most are). The rest of the ingredients are naturally gluten-free. Check labels on any packaged ingredients.
Is it necessary to sear the drumsticks before slow cooking?
No, searing is optional. The slow cooker does not require it, and skipping it saves time. However, searing adds a deeper color and flavor from the Maillard reaction. If you have time, sear them in a hot skillet with a little oil before adding to the slow cooker.

Ingredients

  • 8 bone-in chicken drumsticks
  • 1/2 cup soy sauce
  • 1/3 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp toasted sesame seeds
  • 2 scallions, thinly sliced

Instructions

  1. Place the chicken drumsticks in the slow cooker insert in a single layer, slightly overlapping if needed. In a small bowl, whisk together the soy sauce, balsamic vinegar, brown sugar, and minced garlic. Pour the mixture evenly over the drumsticks, turning them to coat. Ensure every piece is touched by the sauce.
  2. Place the glass lid on the slow cooker. Set the slow cooker to HIGH and cook for 3.5 hours. Do not lift the lid during the first 3 hours to maintain consistent heat and moisture.
  3. After 3.5 hours, remove the lid. Using tongs, carefully turn each drumstick in the thickened sauce. Spoon the glaze over the top of each piece to coat them thoroughly. The sauce should be syrupy and dark.
  4. Insert an instant-read thermometer into the thickest part of a drumstick, avoiding the bone. The internal temperature must reach at least 165°F (74°C). If not, return the lid and cook for another 15 to 20 minutes, then check again.
  5. Using tongs, transfer the drumsticks to a serving platter, arranging them in a single layer. Spoon some of the remaining glaze over the top. Sprinkle with toasted sesame seeds and sliced scallions.
