Before you start

Before beginning, ensure your oven is preheated to 375°F (190°C) to ensure even cooking. If you are using frozen pre-cooked meatballs, ensure they are fully thawed in the refrigerator before starting the recipe.

Prepare your baking dish by lightly greasing it if you want to make cleanup even easier. Have your cheese shredded and ready to go so that the assembly process is smooth and efficient.

Ingredients at a glance (3)
  • 1 lb cooked meatballs, store-bought or made ahead
  • 1 cup barbecue sauce
  • 2 cups shredded cheddar cheese

Instructions

Coating the meatballs

  1. Prepare the meatballs
Preheat the oven to 375°F (190°C). In a large mixing bowl, toss the cooked meatballs with the barbecue sauce until they are thoroughly coated in the glaze. Ensure every meatball is covered to maintain moisture during the baking process, which prevents them from drying out in the oven.
Look for meatballs are fully coated in sauce
Tip Use a large enough bowl to toss the meatballs without splashing sauce everywhere.

At the end of this phase, the meatballs should be completely enveloped in the barbecue sauce. There should be no dry spots remaining on the surface of the meat.

The mixture should look glossy and smell like the smoky components of your chosen sauce, indicating the coating is ready for baking.

Layering the cheese

  1. Assemble the bake
Transfer the coated meatballs into a ceramic baking dish, spreading them out into an even layer. Sprinkle the shredded cheddar cheese generously over the top of the meatballs, covering them completely to create a uniform layer of cheese that will melt into a gooey, delicious topping.
Look for cheese is evenly spread over the meatballs
Tip Ensure the cheese reaches the edges for a nice crust.

Check that the cheese is distributed in an even layer across the top. The meatballs should be mostly hidden beneath the cheese, which will act as a shield during the initial baking phase, keeping the meatballs succulent and tender. Ensure the edges of the dish are clear of excess sauce.

Baking until golden

  1. Bake and serve
Place the baking dish in the preheated oven and bake for 20-25 minutes until the cheese is bubbling and golden. Remove from the oven and let it rest for 5 minutes. The center of the meatballs should reach at least 160°F (71°C) to ensure they are properly heated through.
Look for cheese is bubbling and golden brown
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Keep an eye on the oven to prevent the cheese from browning too quickly.

The final result should feature a bubbly, molten cheese layer that stretches when scooped. The sauce should be visible and bubbling at the sides of the dish. The aroma should be savory and sweet, and the cheese should have a slight golden hue without being burnt or overly crispy.

Common mistakes

A common mistake is overcrowding the baking dish, which can prevent the sauce from caramelizing evenly and the cheese from melting properly.

Another error is failing to preheat the oven, which results in uneven cooking and rubbery cheese. Finally, avoid using pre-shredded cheese if possible, as it often contains anti-caking agents that hinder the smooth, gooey melt you want.

How to tell it’s done

The dish is considered done when the cheese is fully melted, bubbling, and exhibits a light golden-brown color. The internal temperature of the meatballs should reach at least 160°F (71°C).

The sauce should appear thick and slightly caramelized around the edges of the baking dish, indicating that the sugars have reduced.

  • Ground meat: 160°F (71°C) in the thickest part
