Before you start

Before starting, ensure all ingredients are prepped and ready for the skillet. Cut the steak into uniform one-inch cubes and peel and devein the shrimp if they are not already prepared.

Having the yellow rice cooked and cooled slightly will make the assembly process much faster. Set out your baking dish and gather your cooking utensils so that you can move seamlessly from the stovetop to the oven without interruption.

Ingredients at a glance (4)
  • 1 lb steak cubes
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 cups cooked yellow rice

Instructions

Searing the proteins

  1. Sear the proteins
Heat a large skillet over medium-high heat. Melt the butter and add the steak cubes. Sear until the steak reaches an internal temperature of 145°F (63°C). Remove the steak and set aside. In the same skillet, add the shrimp and sear until they turn opaque and reach 145°F (63°C).
Look for The steak should be browned on the outside and the shrimp should be pink and opaque.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Do not overcrowd the pan to ensure a good sear on both the steak and the shrimp.

The steak should be browned deeply on all sides and the shrimp should be vibrant pink and firm. The butter in the skillet should be foaming but not burnt. Check that both proteins are cooked through to the required internal temperature before setting them aside for assembly. The kitchen should smell savory and buttery at this stage of the cooking process.

Assembling the casserole

  1. Assemble the casserole
Preheat your oven to 350°F (175°C). In a baking dish, spread the cooked yellow rice evenly. Layer the seared steak and shrimp on top of the rice, ensuring they are distributed throughout the dish.
Look for The rice should be spread in an even layer at the bottom of the dish.
Tip Use a light hand when layering to keep the ingredients evenly mixed.

The rice should be evenly distributed across the bottom of the baking dish, providing a stable base for the proteins. Arrange the steak and shrimp so they are evenly spaced, which ensures even reheating during the baking phase. The dish should look visually appealing, with a nice contrast between the golden yellow rice and the seared proteins. Everything should be ready for the oven.

Final bake

  1. Bake and serve
Place the baking dish in the preheated oven and bake for 10-15 minutes until everything is heated through. Let the dish rest for 5 minutes before serving to allow the flavors to meld together.
Look for The casserole should be steaming hot and the ingredients well combined.
Tip Cover the dish with foil if you prefer a moister rice texture.

The casserole is finished when the entire dish is steaming hot and the ingredients have melded together. The rice should be warm and slightly soft, while the proteins should remain succulent.

Let the dish rest for at least 5 minutes before serving; this final rest period allows the temperature to stabilize, resulting in a better texture and flavor profile when you finally portion it out.

Common mistakes

A common mistake is overcooking the steak during the initial sear, which can lead to chewy meat after baking. Always monitor the heat and remove the steak as soon as it hits the target temperature.

Another error is failing to dry the shrimp properly; excess water on the surface prevents the shrimp from browning, which diminishes the overall flavor of the final dish. Ensure the pan is properly heated before adding the proteins.

How to tell it’s done

The steak is done when it reaches an internal temperature of 145°F (63°C), which is the minimum safe temperature for whole-cut meat. The shrimp should be opaque and pink throughout, also reaching 145°F (63°C).

Use a meat thermometer to check the center of the largest steak cube to ensure safety and quality. The casserole is ready when it is heated through and the aromas are well-blended.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
  • Shellfish: 145°F (63°C) in the thickest part
