Before you start

Before beginning, ensure that your baking dish is clean and ready. Preheat your oven to 375°F (190°C) so that it is at the correct temperature when you are ready to bake. Have all your ingredients measured and within reach to make the assembly process smooth and quick.

If using a large block of mozzarella, grate it yourself to ensure it melts more evenly compared to pre-shredded varieties, which often contain anti-caking agents that can interfere with the final texture of the melted cheese.

Ingredients at a glance (4)
  • 1 lb dried rigatoni pasta
  • 1 lb raw Italian sausage
  • 24 oz spicy vodka cream sauce
  • 2 cups shredded mozzarella cheese

Instructions

Boil and Prep

  1. Boil the pasta
Bring a large pot of salted water to a rolling boil. Add the rigatoni and cook until it is slightly firmer than al dente, as it will continue to cook in the oven. Drain the pasta well and return it to the pot or transfer directly to the prepared baking dish.
Look for Pasta should be firm to the bite.
Tip Save a small splash of pasta water to help the sauce cling to the noodles later.

The rigatoni should be cooked until it is just shy of al dente, maintaining a firm bite. Ensure the water is well-salted to season the pasta from the inside out.

Once drained, the pasta should look slightly matte and be ready to receive the sauce and meat components immediately to prevent sticking.

Sausage Browning

  1. Brown the sausage
In a skillet over medium-high heat, cook the raw Italian sausage, breaking it into small crumbles with a wooden spoon. Ensure the meat is browned thoroughly and reaches an internal temperature of at least 160°F (71°C) to ensure it is cooked through before adding it to the pasta dish.
Look for Sausage crumbles should be browned and cooked through.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Drain excess fat if the sausage releases too much during browning.

The sausage should be browned thoroughly, with no pink parts remaining. The fat should be rendered out, leaving crispy, flavorful crumbles. If the pan looks very dry after browning, you can leave a small amount of the rendered fat to add extra richness to the overall bake.

Final Bake

  1. Assemble and bake
Preheat the oven to 375°F (190°C). Combine the cooked pasta and browned sausage in the baking dish. Pour the spicy vodka sauce over the mixture and toss to coat evenly. Sprinkle the shredded mozzarella cheese over the top in an even layer. Bake for 20 to 25 minutes until the sauce is bubbling and the cheese is melted and golden brown in spots.
Look for Cheese should be bubbly and golden.
Tip Place the dish on a baking sheet to catch any bubbling sauce.

The final bake is complete when the cheese has transformed into a golden, bubbling layer. The smell should be savory and inviting, with the aroma of the spicy vodka sauce filling the kitchen. The dish should feel solid and cohesive when you lift a serving spoon, with the cheese stretching nicely.

Common mistakes

A common mistake is overcooking the pasta before it goes into the oven. Since the pasta will continue to cook in the sauce, it should be drained while it still has a firm texture.

Another mistake is using too little sauce; the pasta should be well-coated but not swimming in liquid. If the sauce looks too thick before baking, add a tablespoon of pasta water to loosen it up, ensuring the pasta remains creamy throughout the entire baking time.

How to tell it’s done

The dish is considered done when the sauce is bubbling vigorously around the edges of the dish and the shredded mozzarella on top is completely melted and golden brown in spots. The internal temperature of the sausage crumbles should remain at least 160°F (71°C).

Allow the dish to rest for about 5 minutes after pulling it out of the oven; this allows the sauce to settle and thicken slightly, making it much easier to scoop and serve without it being too runny.

  • Ground meat: 160°F (71°C) in the thickest part
