Tips for success
For the best texture, cook the rotini to just al dente — it will continue to soften slightly when stirred into the hot sauce.
If you prefer a saucier dish, keep an extra cup of warm chicken broth on hand and add it a splash at a time until the consistency looks right. The sauce will thicken as it sits, so add a little broth when reheating leftovers.
To make shredding the chicken easier, let it rest on a cutting board for a few minutes before pulling. Use two forks for large, fluffy shreds, or use a hand mixer on low speed for quicker results.
If you like extra heat, stir in a few dashes of hot sauce or a minced jalapeño with the cheese. The dish is flexible — adjust the spice level to your taste.
Variations
- Milder Version: Swap the pepper jack for Monterey Jack and use a mild taco seasoning. Add a can of diced green chiles for flavor without the heat. The dish stays creamy and comforting.
- Extra Veggie: Stir in a cup of diced bell peppers or zucchini with the chicken. Add a can of diced tomatoes with green chiles for more texture and a tangy kick. Increase the broth slightly to keep it saucy.
- Chipotle Twist: Add 1 to 2 chopped chipotle peppers in adobo sauce along with the taco seasoning. The smoky heat pairs beautifully with the corn and black beans. Adjust the amount to your spice tolerance.
- Cheesy Herb Finish: Stir in a handful of chopped fresh cilantro and a squeeze of lime juice just before serving. Top with extra shredded cheese and a dollop of sour cream for a richer finish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of chicken broth to keep the sauce creamy.
- Freezer
- Freeze the cooled pasta bake in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, adding a splash of broth or water to loosen the sauce. Stir frequently until hot.
Leftovers can be refrigerated in an airtight container for up to 4 days. Cool the pasta bake within 2 hours of cooking before storing. Reheat gently in the microwave or on the stovetop with a splash of broth to restore the creamy texture.
The chicken, corn, beans, and seasoning can be layered in the slow cooker insert and refrigerated overnight. In the morning, add the broth and cream cheese, then cook as directed.
The pasta can be cooked and stored separately for up to 2 days; stir it in during the last 15 minutes of cooking.
Serving ideas
Serve this pasta bake straight from the slow cooker for a casual family dinner, or spoon it into bowls for a more polished presentation.
The crunchy tortilla chips are essential for contrast, while the lime wedges add a bright, citrusy pop that cuts through the richness. A handful of fresh cilantro leaves brings color and a mild herbal note that ties everything together.
This dish pairs well with a simple green salad dressed with a tangy vinaigrette, or with warm cornbread on the side. For a lighter touch, serve it with roasted vegetables or a crisp slaw. The leftovers are just as good the next day, so make a double batch if feeding a crowd.

Spicy Crockpot Southwest Chicken and Pepper Jack Pasta Bake

Ingredients
- 2 lb boneless, skinless chicken breasts
- 15 oz fire-roasted corn (drained)
- 15 oz black beans (drained and rinsed)
- 1 packet taco seasoning
- 2 cups chicken broth
- 8 oz cream cheese, softened and cubed
- 16 oz rotini pasta
- 2 cups shredded Pepper Jack cheese
- Crushed tortilla chips, for serving
- Lime wedges, for serving
- Fresh cilantro leaves, for serving
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker. Add the drained fire-roasted corn, drained and rinsed black beans, and the packet of taco seasoning. Pour the chicken broth over everything, then dot the top with the cubed cream cheese. Do not stir; the cream cheese will melt during cooking and create a creamy sauce.
- Cover the slow cooker and cook on LOW for 3.5 hours, until the chicken is tender and easily shreds. The chicken must reach an internal temperature of 165°F (74°C) to be safe to eat.
- Remove the chicken breasts to a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
- While the chicken cooks, bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente, about 8 to 10 minutes. Drain well and set aside.
- Add the drained rotini and the shredded Pepper Jack cheese to the slow cooker. Stir gently until the cheese is fully melted and the pasta is evenly coated with the sauce.
- Cover the slow cooker and cook on LOW for an additional 10 to 15 minutes, until everything is hot and bubbly. The cheese should be fully melted and the pasta heated through.
- Spoon the southwest chicken rotini into bowls. Top each serving with crushed tortilla chips, a squeeze of lime wedges, and fresh cilantro leaves.
