Tips for success
For the best sear, make sure the chicken is dry before seasoning. Moisture on the surface will steam the meat instead of browning it. Use a heavy skillet, like cast iron, to maintain high heat. Let the chicken cook undisturbed for the full 5 minutes per side to achieve a crispy crust.
When making the sauce, whisk constantly to prevent lumps from the flour. Adding the cream slowly helps the roux absorb it evenly. If the sauce seems too thick, add pasta water a tablespoon at a time until it reaches the desired consistency.
Taste the sauce before adding salt—the parmesan and chili oil are both salty. Balance the heat with a touch of lemon juice at the end. For extra richness, add a knob of butter to the finished sauce.
Serve immediately, as the sauce will thicken as it cools. To reheat leftovers, add a splash of milk or cream to loosen the sauce. Reheat gently over low heat, stirring frequently, to avoid breaking the sauce.
Variations
- Add Vegetables: Add sautéed mushrooms, spinach, or peas to the sauce for extra color and nutrients. Sauté the vegetables in the same pan after removing the chicken, then proceed with the sauce.
- Use Shrimp: Substitute the chicken with large shrimp. Sear the shrimp for 2-3 minutes per side until pink and cooked through. Do not overcook; shrimp should reach 145°F (63°C).
- Make it Vegetarian: Omit the chicken and use vegetable broth or pasta water to deglaze the pan. Add extra chili crisp and a handful of roasted red peppers for a vegetarian version.
- Spicy Sausage: Replace the chicken with sliced spicy Italian sausage. Brown the sausage in the skillet, then proceed with the sauce. The sausage adds a robust flavor and extra heat.

The sauce can be made up to 2 days ahead. Cook the chicken and slice it, then store separately. When ready to serve, reheat the sauce gently, add cooked pasta, and toss with the chicken. The pasta may need a splash of hot water to loosen.
Serving ideas
Serve this spicy chili crisp fettuccine Alfredo hot, straight from the skillet. Garnish with extra parmesan, a drizzle of chili oil, and perhaps some fresh herbs like parsley or basil. A side of garlic bread or a simple green salad makes a complete meal.
This dish pairs well with a crisp white wine like Pinot Grigio or a light beer. The creaminess of the sauce balances the heat, making it a comforting yet exciting dinner. For a family-style presentation, bring the skillet to the table.
The recipe yields 4 generous servings. For a lighter meal, serve smaller portions with a side of steamed vegetables.
If you like extra heat, add more chili oil or sprinkle red pepper flakes on top. The dish is best enjoyed fresh, but leftovers can be transformed into a baked pasta casserole the next day.

Spicy Chili Crisp Fettuccine Alfredo with Seared Chicken

Ingredients
- 1 lb boneless, skinless chicken breast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 4 tbsp unsalted butter
- 1 tbsp chili oil
- 2 tsp all-purpose flour
- 1 1/2 cups heavy cream
- 3/4 cup freshly grated parmesan cheese
- 9 oz fettuccine pasta
- 1 tbsp fresh lemon juice
Instructions
- Pat the chicken breasts dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over both sides of the chicken. Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Add the chicken breasts and cook for 5 minutes per side, until golden brown and caramelized. The chicken should reach an internal temperature of 165°F (74°C).
- In the same skillet, reduce the heat to medium. Add the butter and let it melt, then stir in the chili oil. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux. Slowly pour in the heavy cream while whisking to prevent lumps. Add the remaining paprika and garlic powder, and continue to whisk until the sauce thickens slightly, about 3-4 minutes. Remove the skillet from the heat and whisk in the grated parmesan until smooth and creamy.
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta. Add the drained fettuccine to the skillet with the sauce. Toss to coat, adding reserved pasta water a little at a time if the sauce is too thick. The sauce should cling to the pasta.
- Slice the rested chicken into strips. Add the sliced chicken to the skillet with the sauced pasta, along with the lemon juice. Gently toss everything together until the chicken is heated through. Serve immediately, topped with extra grated parmesan and a drizzle of chili oil if desired.
