Tips for success
For the best sear, use a heavy-bottomed skillet like cast iron or stainless steel. Make sure the oil is shimmering before adding the chicken.
Don’t move the chicken too soon—let it develop a golden crust before flipping. If the chicken browns too quickly, reduce the heat to medium to prevent burning.
When adding the cream, pour it slowly while whisking to prevent lumps. If the sauce seems too thick, add more pasta water a tablespoon at a time.
Taste and adjust seasoning with salt and pepper. For extra heat, add more chili crisp or red chili flakes at the end.
Variations
- Shrimp Alfredo: Substitute the chicken with 1 pound of peeled and deveined shrimp. Sear the shrimp for 2-3 minutes per side until pink and cooked through. Proceed with the recipe, folding the shrimp in at the end.
- Vegetarian Version: Omit the chicken and add 2 cups of sautéed mushrooms and spinach. Cook the mushrooms in the skillet after making the sauce, then fold in the spinach until wilted. Increase the parmesan to 1 cup for extra richness.
- Extra Spicy: Add 1/2 teaspoon of cayenne pepper to the sauce along with the garlic powder. Also increase the chili crisp oil to 2 tablespoons. Garnish with extra red chili flakes and a drizzle of chili oil.
- Cajun Chicken Alfredo: Replace the smoked paprika with 1 tablespoon of Cajun seasoning. Use andouille sausage in place of chicken, slicing it and browning it in the skillet. Reduce the salt to 1/4 teaspoon since Cajun seasoning is salty.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; add a splash of milk or cream when reheating to restore its silky texture.
Reheat gently on the stovetop or in the microwave, stirring occasionally to prevent scorching.
The chicken can be seasoned and seared up to 2 days ahead. Slice and refrigerate it separately.
The sauce can also be made ahead and stored in the refrigerator for up to 2 days. When ready to serve, reheat the sauce, cook the pasta, and combine everything.
Serving ideas
Serve this spicy chili crisp chicken Alfredo as a main course with a simple green salad and crusty bread to soak up the extra sauce. A glass of crisp white wine, such as Pinot Grigio or Sauvignon Blanc, complements the creamy, spicy flavors nicely.
For a more indulgent meal, top each serving with extra chili crisp and a few fresh basil leaves. The dish is rich, so portion control is key—about 1 1/2 cups per serving is satisfying. Pair it with roasted vegetables like broccoli or asparagus for balance.

Spicy Chili Crisp Chicken Alfredo

Ingredients
- 1 1/2 lb boneless, skinless chicken breast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 tbsp butter
- 1 tbsp chili crisp oil
- 2 tsp all-purpose flour
- 1 1/2 cups heavy cream
- 3/4 cup freshly grated parmesan cheese
- 9 oz fettuccine
- 1/2 cup pasta water, reserved
- 2 tbsp fresh parsley, chopped
- 1/2 tsp red chili flakes, for garnish
Instructions
- Pat the chicken breast dry with paper towels. In a small bowl, combine the smoked paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over the chicken. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook for 5 minutes per side, until golden brown and cooked through. Transfer the chicken to a cutting board and let it rest for 3 minutes before slicing.
- Once the chicken has rested, slice it into thin strips against the grain. Set aside while preparing the sauce.
- In the same skillet, reduce the heat to medium. Add the butter and chili crisp oil, stirring until the butter melts. Sprinkle in the flour and whisk continuously for 1 minute to cook out the raw flour taste.
- Slowly pour in the heavy cream while whisking. Bring the sauce to a gentle simmer, then reduce the heat to low. Add the garlic powder and the freshly grated parmesan cheese, whisking until the cheese melts and the sauce is smooth.
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
- Add the drained fettuccine to the skillet with the sauce. Toss gently to coat each strand. Add the reserved pasta water, a little at a time, to loosen the sauce to a silky consistency that clings to the pasta.
- Add the sliced chicken and the chopped parsley to the skillet. Gently fold everything together until the chicken is heated through and the parsley is distributed.
- Transfer the pasta to serving plates or a large platter. Sprinkle with red chili flakes for a final touch of heat and color. Serve immediately.
