Tips for success
For the best sear, make sure the chicken is very dry before seasoning. Patting it with paper towels removes excess moisture that would otherwise steam the meat. Use a heavy skillet, like cast iron or stainless steel, to get a deep golden crust.
Don't move the chicken while it's searing; let it develop a crust before flipping. After cooking, let the chicken rest for at least 3 minutes to redistribute the juices.
When making the sauce, grate the Parmesan fresh from a block—pre-shredded varieties often contain anti-caking agents that prevent smooth melting.
If the sauce seems too thick, add a splash of pasta water; if too thin, let it simmer a bit longer. Taste and adjust the chili crisp to your heat preference. For extra crunch, add more chili crisp right before serving.
Variations
- Cajun Alfredo: Replace the paprika with 1 tablespoon of Cajun seasoning. Add 1/2 teaspoon of smoked paprika and a pinch of cayenne. Proceed with the recipe, and garnish with sliced andouille sausage instead of chicken for a smoky twist.
- Mushroom and Spinach: After searing the chicken, sauté 8 oz sliced mushrooms in the same skillet until browned. Add 2 cups fresh spinach and cook until wilted. Then make the sauce and toss with the pasta, mushrooms, and spinach.
- Lemon Herb: Add the zest of one lemon and 1 tablespoon of chopped fresh thyme to the sauce. Omit the chili crisp for a milder version, and top with extra lemon zest and chopped parsley.
- Shrimp Alfredo: Substitute the chicken with 1 lb of peeled, deveined shrimp. Season with the same spice mix and sear for 2-3 minutes per side until pink and cooked through. Proceed with the sauce and pasta.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream or water.
- Freezer
- Freeze in a freezer-safe container for up to 2 months.
- Reheat
- Reheat in a skillet over medium-low heat, stirring frequently, until hot. Add a splash of cream or water if the sauce has thickened.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; add a splash of milk or water when reheating to restore a silky texture. Reheat gently on the stovetop or in the microwave, stirring occasionally. The chicken may lose some crispness, but the flavor will remain.
The chicken can be seasoned and refrigerated up to a day in advance. The pasta can be cooked and tossed with a little oil to prevent sticking, then refrigerated.
When ready to serve, make the sauce and toss the pasta and chicken in it. The entire dish can also be assembled and refrigerated, then reheated in a skillet with a splash of cream or pasta water.
Serving ideas
Serve the fettuccine hot, twirled into nests on warm plates or in shallow bowls. Top each serving with sliced chicken, a drizzle of chili crisp, and a generous sprinkle of scallions.
Pair with a crisp green salad dressed with lemon vinaigrette to balance the richness, and maybe some garlic bread for sopping up the extra sauce.
For a family-style presentation, bring the skillet to the table with extra chili crisp and Parmesan on the side. Let everyone serve themselves, twirling the pasta with tongs. This dish is hearty enough to stand alone, but a glass of dry white wine or sparkling water with lemon complements the heat beautifully.

Spicy Chicken Alfredo Fettuccine with Chili Crisp

Ingredients
- 12 oz fettuccine pasta
- 2 lb boneless, skinless chicken breasts, halved
- 4 tbsp unsalted butter, divided
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 3 tbsp chili crisp, plus more for serving
- 2 tbsp sliced scallions, for topping
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
- Halve the chicken breasts horizontally to create thinner cutlets. Pat them dry with paper towels. In a small bowl, mix the garlic powder, paprika, salt, and black pepper. Rub the seasoning evenly over both sides of the chicken.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken cutlets and cook for 4 minutes per side, until deeply golden and cooked through. Transfer to a cutting board and let rest for 3 minutes before slicing into strips.
- After resting, slice the chicken against the grain into thin strips. Set aside while you make the sauce.
- In the same skillet, reduce the heat to medium and melt the remaining 2 tablespoons of butter. Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated Parmesan until smooth. Stir in 2 tablespoons of chili crisp, reserving the rest for topping.
- Add the cooked fettuccine to the skillet with the sauce. Use tongs to toss the pasta until every strand is coated and glossy. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
- Arrange the sliced chicken on top of the pasta. Drizzle with the remaining 1 tablespoon of chili crisp and sprinkle with sliced scallions. Serve immediately.
