Tips for success
For the best flavor, sear the pork chops in a hot skillet with a little oil before adding them to the slow cooker. This adds a beautiful brown crust and deepens the savory notes. If you choose to sear, do it in a cast-iron skillet over medium-high heat for 2-3 minutes per side. This step is optional but highly recommended for extra richness.
If the gravy is too thin at the end of cooking, you can thicken it with a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water. Stir the slurry into the gravy and let it cook for 15-20 minutes on HIGH until thickened.
Alternatively, you can remove the pork chops and vegetables, then simmer the gravy on the stovetop until it reduces. Taste and adjust seasoning with salt and pepper before serving.
Variations
- Garlic Herb Smothered Chops: Swap the Cajun spice for a blend of dried thyme, rosemary, and sage. Add 4 minced garlic cloves along with the onions. Use a chicken gravy with a splash of white wine for a more refined flavor.
- Spicy Chipotle Version: Add 2 chopped chipotle peppers in adobo sauce to the gravy along with 1 teaspoon of adobo sauce. Reduce the Cajun spice to 1 tablespoon and add a teaspoon of smoked paprika for a smoky, spicy kick.
- Mushroom Onion Gravy: Sauté 8 oz sliced mushrooms with the onions before adding to the slow cooker. Use a beef and mushroom gravy instead of chicken gravy. The earthy mushrooms complement the pork beautifully.
- Apple Cider Braised Chops: Replace 1/2 cup of the gravy with apple cider. Add 1 sliced apple with the onions. The sweetness of the cider and apple pairs perfectly with the pork and adds a subtle fruity note to the gravy.
Storage and make-ahead
- Fridge

Store leftover smothered pork chops and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much. The pork chops will remain tender when reheated slowly.
This dish is perfect for making ahead. Assemble the slow cooker the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
You can also fully cook the dish, let it cool, and refrigerate it for up to 3 days. Reheat on the stovetop or in the oven until warmed through. The gravy will thicken upon cooling, so add a little broth or water when reheating.
Serving ideas
The classic way to serve smothered pork chops is over steamed white rice, allowing the rich gravy to soak into every grain. For a heartier meal, serve with mashed potatoes or buttered egg noodles.
Braised collard greens and a wedge of cornbread complete the Southern experience, adding a touch of bitterness and sweetness that balances the savory pork. A sprinkle of fresh parsley adds a pop of color.
For a low-carb option, serve the pork chops and gravy over cauliflower rice or alongside roasted vegetables. The gravy is so flavorful that you won't miss the carbs. If you have leftovers, try shredding the pork and using it in tacos or sandwiches. The possibilities are endless, but the classic rice and greens combination remains a timeless favorite.

Southern Smothered Pork Chops in Onion Gravy

Ingredients
- 4 bone-in pork chops
- 2 tbsp Cajun spice
- 1 tbsp garlic powder
- 2 Vidalia onions, sliced
- 1 bell pepper, sliced
- 2 cups rich brown onion-chicken gravy
Instructions
- Season the bone-in pork chops on both sides with the Cajun spice and garlic powder. Place the sliced Vidalia onions and bell pepper in the bottom of the slow cooker. Arrange the seasoned pork chops on top of the vegetables.
- Pour the rich brown onion-chicken gravy over the pork chops, making sure the liquid covers most of the meat. The gravy will thin as it cooks and then thicken into a velvety sauce.
- Cover the slow cooker and set it to LOW. Cook for 6.5 hours, or until the pork chops are fork-tender and the meat pulls away from the bone easily. Avoid lifting the lid during cooking to maintain temperature. Let it rest for 3 minutes before slicing.
- After 6.5 hours, insert a fork into the thickest part of a pork chop and twist gently. The meat should shred easily and pull away from the bone. If not, continue cooking in 30-minute increments until it does. Let it rest for 3 minutes before slicing.
- Spoon the smothered pork chops and onion gravy over hot steamed white rice. Serve with braised collard greens and cornbread on the side for a complete Southern meal.
