Tips for success

For the most tender beef, always choose a chuck roast or stew meat labeled for braising. Cut it into uniform cubes so they cook evenly.

If you have time, searing the beef in a hot skillet before adding it to the slow cooker adds an extra layer of flavor, but it’s not necessary for this recipe. The slow cooker does the work, but a quick sear can deepen the savory notes.

To prevent the sour cream from curdling, make sure you use full-fat sour cream and don’t stir the pot while it cooks. If you’re adding any extra ingredients like fresh herbs, do so in the last 30 minutes of cooking.

For a thicker sauce, you can mix a tablespoon of cornstarch with a little water and stir it in during the last 30 minutes, then let it bubble until thickened.

Variations

  • Add Bacon: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the finished dish. The smoky flavor pairs beautifully with the beef and mushrooms. Or, add the bacon to the slow cooker for the last 30 minutes of cooking.
  • Make It Spicy: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce to the sour cream mixture before cooking. For extra heat, serve with sliced jalapeños or a drizzle of sriracha.
  • Herb Infusion: Stir in 2 teaspoons of fresh thyme leaves and 1 tablespoon of chopped fresh parsley during the last 30 minutes of cooking. The herbs add a fresh, bright note to the rich gravy.
  • Use Chicken: Swap the beef for boneless, skinless chicken thighs, cut into chunks. Reduce the cooking time to 4-5 hours on low. Ensure the chicken reaches 165°F (74°C).

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water to loosen the sauce if needed.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld even more as it sits.

Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much. The beef may become even more tender after resting, but it’s best enjoyed within a few days.

This dish is ideal for meal prep. You can assemble the raw ingredients in the slow cooker insert and refrigerate overnight, then cook the next day.

Alternatively, you can cook the full dish, let it cool, and freeze it in portions for up to 3 months. Thaw overnight in the refrigerator before reheating. The sauce may separate slightly upon reheating, but a good stir will bring it back together.

Serving ideas

Serve this dish over a bed of buttered egg noodles for a classic stroganoff experience. The noodles soak up the rich gravy, and the tender beef and mushrooms are the stars. You can also serve it over mashed potatoes, rice, or even crusty bread for dipping. A simple green salad with a tangy vinaigrette balances the richness.

For a complete meal, add a side of steamed green beans or roasted asparagus. A sprinkle of fresh parsley or chives on top adds a pop of color and freshness. If you have extra gravy, serve it on the side for those who want more. This dish is hearty enough to stand alone, but it pairs beautifully with a glass of red wine or a crisp beer.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, this dish is great for making ahead. You can assemble the ingredients in the slow cooker insert and refrigerate overnight, then cook the next day. Or, cook it fully, let it cool, and refrigerate or freeze it. Reheat gently on the stovetop or in the microwave. The flavors actually improve after a day in the fridge.
Why does the sauce sometimes look curdled?
Curdling can happen if the sour cream is low-fat or if the cooker is on too high a heat. To prevent this, use full-fat sour cream, cook on low, and avoid stirring the mixture while it cooks. If the sauce does curdle slightly, it’s still safe to eat, but the texture will be less smooth.
Can this recipe be cooked on high instead of low?
Yes, you can cook it on high for 4 to 5 hours instead of 8 hours on low. The beef will still be tender, but for the most melt-in-your-mouth results, low and slow is recommended. If using high, check the beef for doneness earlier, as different slow cookers vary.
What can be used instead of egg noodles?
This dish is delicious over mashed potatoes, rice, polenta, or even crusty bread. For a lower-carb option, serve it over cauliflower mash or steamed vegetables. The gravy is rich enough to work with almost any starch.
Is it necessary to brown the beef first?
No, browning is not necessary for this recipe. The slow cooker does all the work, and the beef becomes tender without searing. However, if you have extra time, searing the beef in a hot skillet adds a deeper flavor, but it’s completely optional.
