Tips for success
For the most tender beef, choose a well-marbled ribeye and cut it into uniform 1-inch cubes. This ensures even cooking.
If you have time, sear the beef cubes in a hot skillet before adding to the slow cooker—this adds depth of flavor, but it's not necessary. The slow cooker will still produce delicious results.
To prevent the sour cream from curdling, use full-fat sour cream and avoid stirring during the first few hours of cooking.
If you need to thicken the sauce at the end, mix a tablespoon of cornstarch with a little cold water and stir it in, then cook for 15 more minutes. This will give you a glossy, stable gravy.
Variations
- Mushroom Stroganoff: Add 8 oz sliced mushrooms along with the onions and carrots. The mushrooms will release their liquid and add an earthy flavor that pairs perfectly with the sour cream gravy.
- Chicken Version: Substitute boneless, skinless chicken thighs for the ribeye. Cook on LOW for 4-5 hours until the chicken is tender and reaches 165°F (74°C). Shred or leave in chunks.
- Spicy Kick: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper to the gravy mix for a smoky, spicy undertone. Or stir in a tablespoon of hot sauce just before serving.
- Herbed Version: Stir in 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary with the gravy mix. Add a bay leaf during cooking and remove before serving for a more aromatic sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring occasionally, until heated through. Add a little beef broth or water to loosen the sauce if it has thickened.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will meld even more overnight.
Reheat gently in a saucepan over low heat, adding a splash of beef broth or water if the sauce has thickened too much. Avoid boiling, as this can cause the sour cream to separate.
You can assemble the layers in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time because you're starting from cold. This is a great option for busy mornings.
Serving ideas
Serve the ribeye bites and gravy over a bed of warm buttered egg noodles, which soak up the creamy sauce beautifully. Alternatively, spoon over mashed potatoes or steamed rice for equally comforting results. A side of crusty bread is perfect for mopping up every last bit of gravy.
For a complete meal, add a simple green salad with a tangy vinaigrette to cut through the richness. The dish is hearty enough to stand alone, but a light vegetable side like steamed green beans or roasted asparagus balances the plate. Garnish with fresh parsley, if desired, for a pop of color.

Sour Cream Pearl Onion Ribeye Bites: 10-Minute Prep Crockpot Dinner

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 1 cup peeled white pearl onions
- 1 1/2 cups crinkle-cut carrots
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 12 oz buttered egg noodles, cooked
Instructions
- Place the cubed ribeye bites in the bottom of a 7-quart slow cooker in an even layer. Scatter the pearl onions and crinkle-cut carrots over the beef. Dollop the sour cream over the top, then sprinkle the brown gravy mix evenly over everything. Do not stir.
- Cover the slow cooker with the lid. Cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the beef is fork-tender and the sauce is bubbling and thickened. Do not lift the lid during cooking unless necessary. Let it rest for 3 minutes before slicing.
- After the minimum cooking time, check the beef by piercing a cube with a fork. It should be very tender and easily pull apart. Use an instant-read thermometer to verify the internal temperature reaches at least 145°F (63°C). If not done, continue cooking and check again in 30 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the hot gravy for at least 3 minutes before serving. This allows the juices to redistribute and ensures each bite is moist and tender.
- Gently stir the mixture to coat the beef and vegetables in the creamy gravy. Be careful not to break up the beef cubes too much—they should remain in bite-size pieces.
- While the beef rests, cook the egg noodles according to package directions in salted boiling water until al dente. Drain well, then toss with butter to coat. Keep warm.
- Divide the buttered noodles among warm plates. Ladle the ribeye bites, pearl onions, carrots, and gravy over the noodles. Serve immediately, with extra gravy spooned on top if desired.
