Tips for success
For the most tender beef, always cook on low rather than high. The low temperature allows the collagen to break down slowly, resulting in melt-in-your-mouth pieces.
If you're short on time, you can cook on high for 4 hours, but the texture may not be as fork-tender.
To deepen the flavor, you can sear the beef in a hot skillet before adding it to the slow cooker.
This adds a caramelized crust that enhances the overall taste. However, the recipe works perfectly without this step, keeping it truly dump-and-go.
Variations
- Mushroom Addition: Add 8 oz sliced mushrooms along with the onions for extra earthiness. Sauté them first for deeper flavor, or just toss them in raw—they will cook down beautifully.
- Cheesy Twist: Stir in 1 cup shredded Swiss or Gruyère cheese during the last 15 minutes of cooking for a French onion soup-inspired, cheesy gravy. The cheese melts into the sauce, adding richness.
- Spicy Kick: Add 1 teaspoon hot sauce or a pinch of cayenne pepper with the gravy mix for a subtle heat. This balances the creamy tang without overwhelming the dish.
- Herb Infusion: Sprinkle 1 teaspoon dried thyme or rosemary over the beef before adding the onions. The herbs infuse the gravy with aromatic notes that complement the beef and onions.
Storage and make-ahead

- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat on the stovetop or microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 30-second intervals, stirring between, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. This makes it even easier for busy days.
Serving ideas
Serve the beef bites over buttered egg noodles for a classic stroganoff-style meal. The noodles soak up the rich gravy, making each bite satisfying. For a lower-carb option, serve over cauliflower rice or mashed cauliflower.
This dish also pairs well with mashed potatoes, rice, or crusty bread for dipping into the gravy.
A side of steamed green beans or a simple green salad adds freshness and balance. Garnish with fresh parsley or chives if desired, though the video does not show this.

Sour Cream French Onion Beef Bites: Crockpot Dump Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 2 medium Vidalia onions, thinly sliced
- 1 can (10.5 oz) beef consommé
- 1 cup sour cream
- 1 oz brown gravy mix (dry)
- 12 oz buttered egg noodles, cooked
Instructions
- Place the cubed beef chuck in the bottom of the slow cooker. Scatter the sliced Vidalia onions over the beef. Pour the beef consommé over the onions and beef.
- Dollop the sour cream over the top of the onion layer. Sprinkle the dry brown gravy mix evenly over the sour cream. Do not stir; just leave the layers as they are.
- Cover the slow cooker with the lid. Cook on low for 6 to 8 hours, until the beef is fork-tender and the onions are caramelized. Let it rest for 3 minutes before slicing.
- Once the beef is tender, stir the mixture gently to combine the sour cream and gravy into a smooth sauce. The onions will have broken down into silky ribbons.
- Insert an instant-read thermometer into a few beef cubes to ensure they have reached at least 145°F (63°C). The meat should be very tender and pull apart easily with a fork. Let it rest for 3 minutes before slicing.
- While the beef finishes, cook the egg noodles according to package directions in salted boiling water. Drain and toss with butter.
- Spoon the hot beef and gravy over the buttered noodles on a plate or shallow bowl. Serve immediately.
