Tips for success
For the most flavorful result, use a good-quality beef chuck and don't skip the resting time—it allows the juices to redistribute.
If you prefer a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This dish is forgiving, so feel free to adjust the vegetables based on what you have. Cauliflower or green beans work in place of broccoli, and any mushroom variety will do.
To make it a one-pot meal, add 2 cups of baby potatoes or carrots along with the beef at the beginning.
Variations
- Mushroom & Pea: Swap the broccoli for 1 cup of frozen peas, added during the last 30 minutes of cooking. Use only mushrooms and beef for a classic stroganoff feel.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce along with the gravy mix for a gentle heat that complements the creamy sauce.
- Low-Carb: Skip the egg noodles and serve the beef and broccoli over cauliflower rice or zucchini noodles. Use a gluten-free gravy mix and a dairy-free sour cream to make it dairy-free and gluten-free.
- Herb Garden: Stir in 1 teaspoon of dried thyme and 1/2 teaspoon of dried rosemary with the gravy mix for an aromatic, herby note that pairs beautifully with the beef.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce may thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze the cooled mixture in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
- Reheat
- Reheat individual portions in the microwave for 2-3 minutes, or in a saucepan over medium-low heat, stirring occasionally, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld even more overnight. Reheat gently in the microwave or on the stovetop, adding a splash of beef broth or water if the sauce has thickened too much.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert into the slow cooker and cook as directed. This makes it a true dump-and-go dinner.
Serving ideas
Serve this Sour Cream Broccoli Beef Bites over a bed of warm, buttered egg noodles for the classic pairing.
The noodles soak up the rich gravy, making every bite satisfying. For a lighter option, serve over steamed rice, mashed potatoes, or even cauliflower rice.
A crisp green salad with a tangy vinaigrette is a nice contrast to the creamy dish.
You can also sprinkle with fresh parsley or chives for a pop of color, though the recipe is delicious as is. This is a hearty main course that needs little more than a simple side.

Sour Cream Broccoli Beef Bites: Easy Crockpot Dinner

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 3 cups broccoli florets
- 8 oz baby bella mushrooms, sliced
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 12 oz egg noodles, cooked and buttered
Instructions
- Place the cubed beef chuck into the bottom of a 6-quart or larger slow cooker. Scatter the broccoli florets and sliced baby bella mushrooms over the beef. Dollop the sour cream over the top, then sprinkle the brown gravy mix evenly over everything. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is fork-tender and the broccoli is tender but still bright green. Do not open the lid during the first 4 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 6 hours, check the beef by piercing a cube with a fork; it should shred easily. If not, continue cooking for another 30 to 60 minutes. The internal temperature of the beef should reach at least 145°F (63°C) for food safety, but for fall-apart tenderness, it will be much higher. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the hot sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to become even more tender.
- Using a large spoon, gently stir the mixture to combine the sour cream gravy with the beef and vegetables. Be careful not to break up the beef too much; it should remain in hearty chunks.
- While the beef rests, cook the egg noodles according to package directions in salted boiling water until al dente. Drain well and toss with a pat of butter if desired.
- Spoon a generous portion of the buttered egg noodles onto each plate. Ladle the beef and broccoli mixture over the noodles, making sure to include plenty of the creamy gravy.
