Tips for success
For the most tender beef, always choose a well-marbled cut like chuck and cook on LOW rather than HIGH.
The low heat slowly breaks down connective tissue, resulting in meat that falls apart. If you're short on time, HIGH works, but the texture won't be quite as silky.
To thicken the gravy naturally, leave the lid off for the last 30 minutes of cooking. This lets excess moisture evaporate.
If you prefer a thinner sauce, add a splash of beef broth before serving. The gravy will continue to thicken as it cools, so don't over-reduce it.
Variations
- Mushroom Stroganoff: Add 8 oz sliced mushrooms along with the vegetables for an earthy twist. Sauté them first for extra depth, or simply toss them in raw—they'll soften during cooking.
- Herbed Version: Stir in 1 teaspoon dried thyme and 1 teaspoon dried rosemary with the gravy mix. Fresh herbs like parsley or chives can be sprinkled on top before serving.
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or a diced jalapeño to the slow cooker for a subtle heat. Serve with a dollop of extra sour cream to cool it down.
- Red Wine Gravy: Replace 1/4 cup of the sour cream with 1/4 cup dry red wine. This adds complexity and a deeper color to the sauce. Adjust the gravy mix slightly if needed.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooked stroganoff (without noodles) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until bubbling. Add a little beef broth or water to restore the sauce's consistency.

The flavors deepen overnight, making it even better the next day. Keep the noodles separate if possible to prevent them from becoming soggy.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the base and cook as directed. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the stroganoff over warm buttered egg noodles for a classic pairing.
The noodles catch the rich gravy and provide a tender base for the beef and vegetables. For a lower-carb option, serve over mashed cauliflower or steamed rice.
A sprinkle of fresh parsley adds a pop of color, though the video shows none. A side of crusty bread is perfect for sopping up every last bit of sauce. This hearty dish is a complete meal in one bowl—no need for extra sides.

Sour Cream Beef Bites Crockpot Stroganoff

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 lb baby carrots
- 1 1/2 lb red bliss potatoes, quartered
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 12 oz egg noodles
- 2 tbsp butter
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the baby carrots and quartered red potatoes over the beef. In a small bowl, stir together the sour cream and brown gravy mix until smooth, then spoon the mixture over the vegetables and beef.
- Cover the slow cooker with the lid. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and the potatoes are easily pierced with a knife. Let it rest for 3 minutes before slicing.
- When the beef is tender, check that it has reached an internal temperature of at least 145°F (63°C) using an instant-read thermometer. Let the beef rest in the slow cooker for at least 3 minutes before serving.
- While the beef rests, bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain well and toss with the butter until melted.
- Divide the buttered noodles among serving plates. Ladle the beef, vegetables, and gravy over the noodles. Serve hot.
