Tips for success
For the most tender ribs, cook them on LOW rather than HIGH. The long, gentle heat is what breaks down the collagen and transforms the meat into buttery perfection.
If you're short on time, you can cook on HIGH for 4–5 hours, but the result won't be quite as fall-apart tender. Always let the ribs rest in the sauce for a few minutes before serving—this helps them reabsorb some of the liquid and stay juicy.
The sauce will reduce and intensify during cooking, but if it seems too thin at the end, you can transfer it to a saucepan and simmer it on the stove for a few minutes to thicken.
Taste it and adjust with a pinch of salt or a splash of vinegar if it needs more balance. For a smoky twist, add a teaspoon of liquid smoke along with the BBQ sauce. Serve the ribs with plenty of sauce spooned over the top.
Variations
- Spicy Chipotle: Add 1–2 chipotle peppers in adobo sauce, minced, to the BBQ sauce before pouring over the ribs. The smoky heat pairs beautifully with the sweet molasses and paprika.
- Orange Molasses: Stir in the zest and juice of 1 orange into the sauce for a bright, citrusy note that cuts through the richness. Reduce the molasses sauce by 1/4 cup to keep the balance.
- Beer-Braised: Replace 1/2 cup of the BBQ sauce with a dark beer, such as stout or porter. The beer adds depth and a slight bitterness that complements the sweet glaze.
- Herb Garden: Add 2 sprigs of fresh rosemary and 3 sprigs of thyme to the slow cooker before cooking. Remove the herbs before serving. The aromatics add a subtle earthiness.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. The sauce will thicken when cold, but it will loosen when reheated.
- Freezer
- Freeze the cooked ribs in an airtight container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a covered pot on the stove over medium-low heat, stirring occasionally, until warmed through. Or microwave in 30-second bursts.
Store any leftover short ribs in an airtight container in the refrigerator for up to 4 days. The sauce will solidify slightly when chilled, but it will re-liquefy when reheated.
To reheat, place the ribs in a covered pot or baking dish and warm them in a 350°F (175°C) oven for 15–20 minutes, or in the microwave in 30-second bursts. The meat will stay moist and tender.
You can assemble the ribs in the slow cooker insert up to 24 hours ahead of time. Rub the spices on the ribs, pour the sauce over, cover, and refrigerate. When you're ready to cook, place the insert in the slow cooker and cook on LOW as directed. This is great for meal prep or for getting dinner started the night before.
Serving ideas
Serve the short ribs over creamy mashed potatoes, soft polenta, or buttered egg noodles to soak up the rich sauce. A side of roasted vegetables or a crisp green salad balances the richness. For a complete meal, add some crusty bread for dipping into the leftover sauce—it's too good to waste.
Garnish with chopped fresh parsley or chives for a pop of color, if you like. The ribs are also delicious shredded and piled onto toasted buns for a decadent sandwich.
For a casual dinner, serve them straight from the slow cooker with a spoonful of sauce over each piece. However you serve them, the meat will be so tender it almost melts in your mouth.

Smoky Paprika Molasses Beef Short Ribs: Crockpot

Ingredients
- 4 lb bone-in English-cut beef short ribs
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- In a small bowl, stir together the smoked paprika, garlic powder, kosher salt, and black pepper. Pat the beef short ribs dry with paper towels. Rub the spice mixture all over the ribs, coating every side evenly. Place the seasoned ribs in the slow cooker insert, arranging them in a single layer as much as possible.
- Pour the molasses garlic BBQ sauce over the seasoned ribs. Use a spoon or spatula to spread the sauce so it covers the top of the ribs. It's okay if some sauce pools around the meat—it will create the braising liquid.
- Cover the slow cooker and cook on LOW for 8 hours, or until the meat is fork-tender and easily pulls away from the bone. Avoid opening the lid during cooking to keep the heat steady. The sauce will darken and reduce slightly as the ribs braise. Let it rest for 3 minutes before slicing.
- Test the ribs with a fork: the meat should shred easily and the internal temperature should read at least 145°F (63°C), but for fall-apart tenderness, it will be much higher. Let the meat rest in the sauce for 10 minutes before serving.
- Using a carving fork or tongs, carefully lift the ribs out of the slow cooker, letting excess sauce drip back. Place the ribs on a serving plate. Spoon some of the hot sauce from the slow cooker over the top. Serve immediately.
