Tips for success

For the most even cooking, arrange the ribs in a single layer in the slow cooker. If they overlap, rotate them halfway through cooking.

To get a caramelized crust, transfer the cooked ribs to a baking sheet, brush with extra sauce, and broil for 2-3 minutes until the edges are charred. This adds a smoky, barbecue-style finish that mimics grill marks.

The sauce will thin out as the ribs release juices. If you prefer a thicker glaze, remove the ribs when done and simmer the sauce on the stovetop or on high in the slow cooker until reduced.

Skim any excess fat from the surface before serving. For a brighter flavor, stir in a splash of apple cider vinegar or a squeeze of lemon juice at the end.

Variations

  • Spicy Chipotle Ribs: Add 2 chopped chipotle peppers in adobo sauce to the BBQ sauce for a smoky heat. Reduce smoked paprika to 1 tbsp and add 1 tsp cayenne pepper to the rub for extra kick.
  • Honey Garlic Ribs: Replace the molasses BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 1 tbsp rice vinegar. Cook as directed for a sticky-sweet glaze.
  • Dr Pepper Ribs: Substitute 1 cup of Dr Pepper for 1/2 cup of the BBQ sauce. The soda adds a subtle sweetness and helps tenderize the meat. Reduce sugar in the rub slightly to balance.
  • Smoky Bourbon Ribs: Stir 2 tbsp bourbon into the molasses BBQ sauce before pouring over the ribs. The alcohol cooks off, leaving a rich, smoky depth. Add 1 tsp vanilla extract for extra complexity.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until hot.
Freezer
Wrap cooled ribs tightly in foil or place in a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a 350°F (175°C) oven for 10-15 minutes, or in the microwave in 30-second bursts until warmed through.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The meat will become even more tender as it sits. Reheat gently in the microwave or oven until warmed through. The sauce can be stored separately and spooned over the ribs before reheating.

The ribs can be fully cooked up to 2 days ahead. Cool them in the sauce, then refrigerate in the slow cooker insert or a covered container. To serve, reheat gently on the stovetop or in the oven until hot. The flavors meld and deepen overnight, making them even more delicious the next day.

Serving ideas

Serve these ribs as the centerpiece of a barbecue spread, alongside coleslaw, cornbread, or baked beans. The sweet-savory glaze pairs well with tangy pickles and a crisp green salad.

For a heartier meal, pile the ribs onto a platter with extra sauce and let everyone dig in with their hands.

For a neat presentation, slice the ribs individually and arrange them on a white platter. Spoon a little sauce over the top and garnish with chopped parsley or scallions if desired.

These ribs also make excellent sandwiches: pull the meat off the bones, pile it onto buns, and drizzle with extra sauce.

Frequently asked questions

Can this recipe be made with other types of ribs?
Yes, but cooking times will vary. St. Louis-style ribs are meatier and may need 7-8 hours on low. Beef short ribs can also be used but will require a longer cook time and may be saucier. Always check for fork-tenderness and an internal temperature of at least 145°F (63°C).
Why does the sauce turn watery during cooking?
The ribs release juices as they cook, which can thin the sauce. To fix this, remove the ribs when done and simmer the sauce on high for 15-20 minutes to reduce and thicken. You can also add a slurry of cornstarch and water to speed up thickening.
Is it necessary to remove the membrane from the ribs?
Removing the thin membrane on the back of the ribs helps the rub penetrate and makes the meat more tender. It's a simple step: slide a knife under the membrane, lift it, and pull it off with a paper towel. If left on, it can become chewy.
Can these ribs be finished on the grill?
Absolutely. After slow cooking, transfer the ribs to a preheated grill over medium heat. Brush with extra BBQ sauce and grill for 5-10 minutes, turning once, until charred and caramelized. This adds a smoky, barbecue flavor and a crisp exterior.
What is the best way to reheat leftover ribs?
Reheat in a 350°F (175°C) oven for 10-15 minutes, wrapped in foil to retain moisture. For a quicker option, microwave in 30-second bursts. Add a splash of water or extra sauce to prevent drying. Avoid overcooking to keep the meat tender.

Smoky Paprika Molasses Baby Back Ribs: Slow-Cooker Fall-Off-the-Bone

Slow-cooker baby back ribs glazed with molasses garlic sauce

Ingredients

  • 2 racks pork baby back ribs (about 2 lb each)
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 1/2 cups molasses garlic BBQ sauce

Instructions

  1. Pat the pork baby back ribs dry with paper towels. In a small bowl, stir together the smoked paprika, garlic powder, kosher salt, and black pepper. Rub the spice mixture all over both racks of ribs, coating every surface evenly.
  2. Place the seasoned ribs in the bottom of a 6-quart slow cooker, standing them upright against the walls if needed to fit. Pour the molasses garlic BBQ sauce over the ribs, using a spatula to spread it evenly.
  3. Cover the slow cooker and cook on low for 6 to 7 hours, until the meat is fork-tender and pulls away from the bone easily. Avoid opening the lid during cooking to keep the heat and moisture steady. Let it rest for 3 minutes before slicing.
  4. Test the ribs with a fork: the meat should twist easily off the bone and register at least 145°F (63°C) on an instant-read thermometer. If not done, continue cooking in 30-minute increments. Let it rest for 3 minutes before slicing.
  5. Using tongs, carefully transfer the ribs to a cutting board. Let them rest for at least 3 minutes before slicing. This allows the juices to redistribute, keeping the meat moist.
  6. Slice the ribs between the bones and arrange on a warm platter. Spoon some of the reduced sauce from the slow cooker over the top, if desired. Serve hot.
