Tips for success
For the best flavor, let the seasoned ribs sit in the refrigerator overnight. This allows the spice rub to penetrate the meat more deeply.
If you are short on time, even 30 minutes at room temperature helps. Just remember that raw meat should not sit out for more than 30 minutes before cooking.
To get a thicker, more caramelized glaze on the ribs, you can finish them under the broiler for 2 to 3 minutes after they are cooked.
Place the ribs on a baking sheet, brush with some of the reduced sauce, and broil until bubbly and lightly charred. Watch them closely to prevent burning.
Variations
- Spicy Chipotle: Add 2 minced chipotle peppers in adobo sauce along with the BBQ sauce, and use hot smoked paprika instead of sweet. The result is a smoky, spicy kick that balances the sweetness of the sauce.
- Honey Garlic: Stir 1/4 cup honey and 4 minced garlic cloves into the BBQ sauce before pouring over the ribs. This adds a sticky-sweet glaze with a punch of garlic flavor.
- Beer Braised: Replace 1/2 cup of the BBQ sauce with a dark beer, such as a stout or porter. Add it to the slow cooker with the sauce for a deeper, maltier flavor that complements the beef.
- Smoky Chipotle Peach: Mix 1/2 cup peach preserves into the BBQ sauce. The fruity sweetness pairs beautifully with the smoked paprika and gives the sauce a glossy, jammy texture.

Serving ideas
Serve the ribs hot, straight from the slow cooker, with plenty of extra sauce spooned over the top. They are excellent with classic barbecue sides like coleslaw, cornbread, or baked beans.
For a low-effort meal, pile them on a bed of creamy mashed potatoes or buttery egg noodles to soak up the sauce.
For a more casual presentation, shred the meat and serve it on soft buns as a sandwich, or pile it over a green salad for a lighter option. The sticky, smoky sauce pairs well with pickles and a crisp, tangy slaw. Do not forget plenty of napkins—these ribs are messy in the best way.

Smoky Paprika BBQ Short Ribs: 5-Ingredient Slow Cooker

Ingredients
- 4 lb bone-in English-cut beef short ribs
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 cups thick Kansas City-style BBQ sauce
Instructions
- Place the beef short ribs in the slow cooker insert. In a small bowl, combine the smoked paprika, garlic powder, kosher salt, and black pepper. Sprinkle the spice rub evenly over all sides of the ribs, pressing gently to adhere.
- Pour the thick Kansas City-style BBQ sauce over the seasoned ribs, turning the ribs to coat them completely. Make sure the sauce covers the meat generously, but it is okay if some rib tops remain exposed.
- Cover the slow cooker and cook on low for 8 hours. Do not lift the lid during cooking, as this releases heat and extends the cooking time. The ribs are done when the meat is fork-tender and easily pulls away from the bone. Let it rest for 3 minutes before slicing.
- Insert a fork into the thickest part of a rib; it should twist easily and the meat should start to separate from the bone. The internal temperature should read at least 145°F (63°C), but for fall-apart tenderness, expect it to be higher. Let the ribs rest in the sauce for 10 minutes before serving.
- Using a carving fork, lift each short rib out of the slow cooker, letting excess sauce drip back into the pot. Place the ribs on a serving platter or individual plates. Spoon additional sauce from the slow cooker over the top.
