Tips for success
For the most tender ribs, cook on low rather than high. Low heat gives the collagen time to break down slowly, resulting in a more succulent texture.
If you're short on time, high heat can work, but check often after 3 hours to avoid overcooking. The ribs are done when the meat is fork-tender, not when the timer goes off—every slow cooker runs slightly different.
To get a caramelized exterior, you can transfer the cooked ribs to a baking sheet and broil for 2-3 minutes until the sauce bubbles and darkens. Watch closely to prevent burning.
If you like a thicker glaze, pour the sauce from the slow cooker into a saucepan, simmer until reduced by half, then brush it over the ribs before serving.
Variations
- Spicy Chipotle: Add 1-2 minced chipotle peppers in adobo sauce to the BBQ sauce along with a teaspoon of adobo sauce. The smoky heat complements the sweet maple and bourbon for a bold, spicy kick.
- Honey Garlic: Replace the maple bourbon BBQ sauce with a mixture of 1 cup honey, 1/4 cup soy sauce, and 4 cloves minced garlic. Cook as directed for a sticky, savory-sweet glaze.
- Cherry Cola: Substitute 1 cup of cherry cola for 1/2 cup of the BBQ sauce. The soda adds a touch of sweetness and helps tenderize the meat, while the cherry flavor pairs beautifully with the pork.
- Smoky Apple: Use a apple bourbon BBQ sauce or add 1/2 cup of apple cider to the sauce. The fruity note brightens the rich pork and complements the smoked paprika.

Leftover ribs keep in an airtight container in the refrigerator for up to 4 days. Store them with some of the sauce to keep them moist. Reheat gently in the microwave or in a covered skillet over low heat, adding a splash of water or extra sauce to prevent drying.
The ribs can be cooked a day ahead and refrigerated in the sauce. Reheat them in a 300°F (150°C) oven, covered, for 20-30 minutes until warmed through. The rub can also be mixed up to a week ahead and stored in an airtight container. The sauce can be measured out ahead of time.
Serving ideas
Serve these ribs as the centerpiece of a casual dinner. They pair well with classic sides like coleslaw, cornbread, or baked beans.
The sweet and smoky flavor also works with creamy mashed potatoes or a crisp green salad to cut through the richness. Provide plenty of napkins—these ribs are messy in the best way.
For a fun presentation, cut the racks into individual ribs and pile them on a large platter. Spoon some of the warm sauce over the top and garnish with a sprinkle of fresh parsley or sliced green onions if desired.
The ribs are also great for game-day gatherings or a backyard-style feast, served alongside extra sauce for dipping.

Smoky Maple Bourbon Baby Back Ribs: Slow-Cooker Fall-Off-The-Bone Dinner

Ingredients
- 2 racks baby back pork ribs (about 2 lb total)
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 cups maple bourbon BBQ sauce
Instructions
- Pat the racks of baby back ribs dry with paper towels. In a small bowl, stir together the smoked paprika, garlic powder, kosher salt, and black pepper. Rub the mixture all over both sides of the ribs, pressing gently to adhere. Place the racks side by side in the bottom of a 6-quart slow cooker, meaty side up.
- Pour the maple bourbon BBQ sauce evenly over the ribs, using a spoon to spread it across the surface. Make sure every part of the meat is coated, but don't stir—just let the sauce pool around the racks.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the meat is fork-tender and starting to pull away from the bones. Do not open the lid during cooking—the steam does the work. When the ribs are done, carefully transfer them to a cutting board. Let them rest for 10 minutes.
- After resting, cut the racks between the bones into individual ribs. Place the ribs on a serving platter, spoon some of the hot glaze from the slow cooker over the top, and serve warm.
