Before you start

Before beginning, ensure all ingredients are at room temperature to facilitate even mixing. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper to prevent sticking.

Cook the bacon in advance until it is very crisp, then drain it on paper towels to remove excess grease before crumbling it into bite-sized pieces. Measure all your ingredients accurately and have your tools, including the mixing bowl and silicone spatula, within easy reach to streamline the preparation process.

Ingredients at a glance (4)
  • 6 slices bacon, cooked crisp and crumbled
  • 1 cup dark chocolate chunks
  • 2 tbsp pure maple syrup, for drizzling
  • 1/2 tsp flaky sea salt

Instructions

Mixing the Dough

  1. Prepare the Mix-ins
Combine the crumbled crisp bacon and dark chocolate chunks into your prepared cookie dough base in a large mixing bowl. Fold the ingredients gently using a silicone spatula until they are evenly distributed throughout the dough, being careful not to crush the chocolate chunks too much during the process.
Look for The dough should look uniform with bacon and chocolate pieces visible throughout.
Tip Ensure the bacon is fully cooled before adding it to the dough to prevent the chocolate from melting prematurely.

The dough should be cohesive and thick, with the bacon and chocolate evenly dispersed.

Check that the chocolate chunks are not breaking apart and that the bacon is evenly distributed so every portion of dough contains a balanced amount of both ingredients. The mixture should feel heavy and consistent throughout the bowl.

Baking the Cookies

  1. Bake the Cookies
Arrange the cookie dough portions on a baking sheet, spacing them evenly to allow for spreading. Transfer the sheet to a preheated oven and bake until the edges turn a perfect golden-brown and the centers are set. Remove the baking sheet from the oven and allow the cookies to cool on the pan for five minutes before transferring them to a wire rack.
Look for Look for golden-brown edges and soft, melted chocolate pools in the center of each cookie.
Tip Do not overbake, as the cookies will continue to firm up slightly while they rest on the hot pan.

The cookies are finished when the edges show a distinct golden-brown color and the centers appear set. The chocolate should be soft and melted. Ensure the cookies have cooled for at least five minutes on the pan before attempting to move them, as they are very fragile immediately upon coming out of the oven.

Glazing and Finishing

  1. Glaze and Finish
While the cookies are still warm, lightly brush the top of each cookie with pure maple syrup to add a subtle sweetness and shine. Immediately sprinkle a pinch of flaky sea salt over the wet syrup to ensure it adheres to the cookie surface. Serve the cookies while they are still slightly warm for the best texture and flavor experience.
Look for The syrup will create a glossy sheen and the salt should stick to the surface of the cookies.
Tip Use a light hand with the syrup to avoid making the cookies soggy; just a thin coating is sufficient.

The maple syrup should create a light, glossy sheen on the surface of the warm cookie. The flaky salt should be visible and adhered to the syrup. Check that the cookies have been allowed to cool slightly before serving, as this ensures the flavors have melded and the texture is perfectly balanced.

Common mistakes

A common mistake is using undercooked or chewy bacon, which adds an unpleasant texture and excess moisture to the cookie dough. Always fry the bacon until it is brittle and drain it thoroughly.

Another error is over-mixing the dough after adding the chocolate and bacon; this can break the chocolate chunks into smaller pieces and result in a muddy color. Fold just until incorporated to ensure the finished cookies look beautiful with distinct, appetizing pockets of chocolate and bacon throughout.

How to tell it’s done

The cookies are done when the edges are firm and golden-brown, while the centers remain soft and slightly undercooked in appearance. The chocolate chunks should be visibly melted but still hold their shape within the dough.

Because these cookies contain no raw protein, they do not require a specific internal temperature check. Allow them to rest on the baking sheet for five minutes, which allows the structure to firm up enough to handle without breaking apart.
