Tips for success
For the best caramelization, use a heavy-bottomed skillet and give the onions time. Don’t stir constantly; let them sit for a minute or two between stirs to develop color.
If they stick, add a splash of water or broth to deglaze. This technique builds a deep, complex flavor that’s worth the extra minutes.
To get a good char on the sausage, make sure the skillet is hot before adding the slices. Avoid moving them too soon; let them sear undisturbed for a few minutes.
The high heat creates a crisp exterior that contrasts nicely with the tender interior. If you like extra smoky flavor, you can finish the dish under the broiler for the last minute, watching closely to prevent burning.
Variations
- Spicy Kick: Add 1 teaspoon of red pepper flakes or a minced fresh chili along with the onions for a fiery version. You can also use a spicy barbecue sauce or add a dash of hot sauce to the glaze.
- Bourbon Glaze: Replace 2 tablespoons of the honey barbecue glaze with bourbon or whiskey. Add it to the skillet with the glaze and let it bubble for an extra minute to cook off the alcohol, adding a rich, smoky depth.
- Apple and Onion: Substitute one of the onions with a thinly sliced apple (such as Granny Smith or Honeycrisp). Sauté the apple with the onions for a sweet-tart twist that pairs beautifully with the sausage.
- Sheet Pan Version: Skip the skillet and toss the sliced sausage and onions with olive oil, salt, and pepper on a sheet pan. Roast at 425°F (220°C) for 20 minutes, then toss with the glaze and roast for 5 more minutes until sticky.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat, stirring occasionally, until hot and bubbling. Or microwave in 30-second bursts, stirring between, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The glaze will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or broth to loosen the sauce if needed.
The onions can be caramelized up to 2 days ahead and stored in the refrigerator. When ready to cook, reheat them in the skillet, then proceed with searing the sausage and glazing.
The entire dish can also be assembled (without the final roast) and refrigerated for up to 24 hours before baking; add a few extra minutes to the oven time.
Serving ideas
Serve the smoky glazed sausage and onions straight from the foil tray for a casual, rustic presentation.
It pairs wonderfully with creamy mashed potatoes, buttery egg noodles, or steamed rice to soak up the sticky sauce. A side of crusty bread is perfect for mopping up every last bit of glaze.
For a complete meal, add a simple green salad or roasted vegetables. The dish also works well as a hearty topping for baked potatoes or as a filling for sandwiches. Leftovers are delicious cold in a lunch box or reheated and piled onto a bun for a quick sausage sandwich.

Smoky Glazed Sausage and Onions: One-Pan Dinner

Ingredients
- 1 1/2 lb smoked sausage links
- 3 large onions, sliced
- 1/2 cup honey barbecue glaze
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced onions and salt. Cook, stirring occasionally, until the onions are soft, golden brown, and caramelized, about 12 to 15 minutes. If they start to stick, add a splash of water and scrape up the browned bits. Season with black pepper.
- While the onions cook, slice the smoked sausage links into 1/2-inch thick rounds. Add the sausage slices to the skillet with the onions, spreading them into a single layer. Increase the heat to medium-high and cook without stirring for 2 to 3 minutes until the bottoms are charred and golden. Flip and char the other side for another 2 minutes.
- Pour the honey barbecue glaze over the sausage and onions. Stir to coat everything evenly. Let the mixture bubble vigorously for 2 to 3 minutes, stirring occasionally, until the glaze thickens and clings to the sausage and onions.
- Transfer the glazed sausage and onions to an aluminum foil tray (or a sheet pan) and spread into an even layer. Place the tray in a preheated oven at 400°F (200°C) and roast for 8 to 10 minutes, until the edges are caramelized and the glaze is bubbling.
