Tips for success
For the best texture, cook the ribs on low rather than high. Low heat gives the collagen more time to break down, resulting in meat that is tender but still holds its shape.
If you're short on time, high heat works, but the meat may be slightly less fall-apart. Also, try to arrange the ribs in a single layer so they cook evenly; overlapping can leave some pieces undercooked.
The sauce will thicken as it cooks, but if it seems too thin at the end, you can remove the ribs and simmer the sauce on the stovetop for a few minutes to reduce it.
Just be careful not to over-thicken, as it will continue to set as it cools. For a smokier flavor, add a dash of liquid smoke, but taste first—the chipotle already provides plenty of smokiness.
Variations
- Honey Garlic Ribs: Replace the chipotle peppers with 4 cloves of minced garlic and increase the honey to 1/2 cup. Omit the chipotle for a milder, sweeter glaze that's perfect for kids.
- Spicy BBQ Ribs: Add 1 tablespoon of hot sauce or 1 teaspoon of cayenne pepper to the BBQ sauce before pouring. For extra heat, stir in 2 tablespoons of chopped pickled jalapeños.
- Root Beer Ribs: Substitute 1 cup of root beer for 1/2 cup of the BBQ sauce. The soda adds a subtle sweetness and helps tenderize the meat even more.
- Smoky Maple Ribs: Swap the honey for maple syrup and use a maple-flavored BBQ sauce. Add 1 teaspoon of smoked paprika to deepen the smoky flavor.

Store leftover ribs in an airtight container with some of the sauce. They will keep in the refrigerator for up to 4 days.
To reheat, place the ribs in a baking dish, cover with foil, and warm in a 350°F (175°C) oven for 15-20 minutes, or until heated through. You can also reheat in the microwave, but the oven preserves the texture better.
The ribs can be fully cooked up to 2 days ahead. Cool them completely in the sauce, then refrigerate in an airtight container. To serve, reheat gently on the stovetop or in the oven. The flavors continue to meld overnight, so leftovers often taste even better the next day.
Serving ideas
Serve the ribs straight from the slow cooker for a casual family dinner, or transfer them to a platter for a more polished presentation. Spoon extra sauce over the top and let everyone help themselves.
These ribs pair well with coleslaw, cornbread, or a simple green salad. The sticky glaze is also delicious over rice or mashed potatoes.
For a backyard-style feast, serve the ribs with pickles, sliced white bread, and extra BBQ sauce on the side. The meat is rich and smoky, so bright, tangy sides balance it out. If you have leftovers, shred the meat and pile it onto buns for incredible pulled pork sandwiches.

Smoky Chipotle Molasses Spare Ribs: 10-Minute Prep Crockpot Dinner

Ingredients
- 4 lb St. Louis style pork spare ribs
- 1/2 cup chipotle peppers in adobo sauce, chopped
- 1/4 cup raw honey
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the St. Louis style spare ribs in the bottom of a 6-quart slow cooker, overlapping slightly if needed. They should fit in a single snug layer.
- Spoon the chopped chipotle peppers in adobo over the ribs, spreading them evenly. Drizzle the raw honey over the top, letting it pool in the crevices.
- Pour the molasses garlic BBQ sauce over the ribs in thick ribbons, covering as much surface as possible. Use a spoon to nudge the sauce into the gaps.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours. The ribs are done when the meat is fork-tender and easily pulls away from the bone. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the ribs rest in the sauce for 10 minutes. Using a fork, lift the ribs out of the sauce and transfer to a serving plate. Spoon extra sauce over the top.
