Tips for success
For the most flavorful ribs, choose a good-quality molasses garlic BBQ sauce. If you have time, you can make your own by simmering ketchup, molasses, garlic, and spices until thick.
The sauce will reduce further in the slow cooker, so don't be alarmed if it looks thin at first—it will thicken as it cooks.
To make the sauce extra glossy, you can skim off some of the fat from the top after cooking.
If you prefer a thicker sauce, transfer the liquid to a saucepan and simmer over medium heat for 5 to 10 minutes until it reaches your desired consistency. This also intensifies the flavor.
Variations
- Spicy Honey-Garlic Ribs: Replace the molasses garlic BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 2 tablespoons minced garlic, and 1 teaspoon red pepper flakes. Cook as directed for a sweet and spicy twist.
- Smoky Bourbon Ribs: Stir 1/4 cup bourbon into the BBQ sauce before pouring over the ribs. The alcohol will cook off, leaving a deep, smoky flavor. Add a teaspoon of liquid smoke for extra smokiness.
- Root Beer Ribs: Replace 1/2 cup of the BBQ sauce with root beer. The carbonation helps tenderize the meat and adds a subtle sweetness. Finish with a splash of apple cider vinegar for tang.
- Chipotle-Orange Ribs: Add the zest and juice of one orange along with the chipotle peppers. The citrus brightens the smoky, sweet flavors and balances the richness of the pork.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooked ribs in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat ribs in the microwave, in a covered skillet over medium heat, or in a 350°F (175°C) oven until warmed through.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently in the microwave or on the stovetop, adding a splash of water or broth if needed to loosen the sauce. The ribs also freeze well for up to 3 months.
You can assemble the entire dish the night before: place the ribs in the slow cooker insert, add the chipotle, honey, and BBQ sauce, and cover.
Store the insert in the refrigerator overnight, then place it in the slow cooker base and cook as directed in the morning. This makes the recipe even more convenient for busy days.
Serving ideas
These ribs are fantastic served with classic barbecue sides like coleslaw, cornbread, or baked beans.
The sweet and smoky glaze also pairs well with creamy mashed potatoes or a simple green salad. For a low-effort meal, serve the ribs over rice or with crusty bread to soak up the extra sauce.
For a fun presentation, pile the ribs on a platter and sprinkle with chopped fresh cilantro or sliced green onions. You can also serve them on slider buns with pickles for a casual, crowd-pleasing dinner. The leftovers make excellent tacos or quesadillas the next day.

Smoky Chipotle Molasses Country Pork Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 1 tbsp chipotle peppers in adobo, chopped
- 1/4 cup raw honey
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. They can overlap slightly if needed, but try to keep them even for consistent cooking.
- Scatter the chopped chipotle peppers in adobo over the ribs, then drizzle the raw honey evenly across the surface. Use a spoon or your fingers to spread the chipotle pieces so they are distributed over the meat.
- Pour the molasses garlic BBQ sauce over the ribs, covering them completely. Use a spatula to spread the sauce evenly, making sure every piece of meat is coated in the dark, glossy glaze.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the ribs are fork-tender and easily pull apart. Avoid opening the lid during cooking, as this releases heat and extends the cooking time. Let it rest for 3 minutes before slicing.
- Check the internal temperature of the thickest rib with an instant-read thermometer; it should read at least 145°F (63°C). Let the ribs rest in the sauce for 5 minutes before serving, allowing the juices to redistribute.
- Using a carving fork, lift the ribs out of the slow cooker and place them on a serving plate. Spoon some of the remaining glaze from the pot over the top. Serve hot, with extra sauce on the side if desired.
