Before you start

Before you begin, pat the short ribs dry with paper towels and trim any large fat caps if you like. Chop the chipotle peppers finely to distribute their heat evenly. Measure the honey and BBQ sauce.

No need to sear the meat—the slow cooker does all the work. Make sure the slow cooker insert is clean and dry, then place it in the base. Have a serving plate ready for the finished ribs.

Ingredients at a glance (4)
  • 4 lb bone-in beef short ribs
  • 1 tbsp chipotle peppers in adobo, chopped
  • 1/4 cup raw honey
  • 1 cup molasses garlic BBQ sauce

Instructions

Load the Slow Cooker

  1. Layer the Ribs and Seasonings
Place the beef short ribs in the slow cooker insert in a single layer, meaty side up. Spoon the chopped chipotle peppers over the ribs, then drizzle with the honey. Pour the molasses garlic BBQ sauce over everything, turning the ribs to coat each piece evenly.
Look for The ribs are coated in a thick, glossy red-brown sauce.
Tip If the ribs are very large, trim any excess fat, but leave some for flavor.

At this stage, the ribs are arranged in the crockpot, coated in a thick, glossy red-brown sauce with visible flecks of chipotle and a sheen of honey. The aroma is already enticing—smoky, sweet, and tangy. Before moving on, make sure every rib is well coated and the sauce is evenly distributed.

Slow Cook Until Tender

  1. Slow-Cook Until Fork-Tender
Cover the slow cooker and cook on LOW for 8 hours, or until the meat is fork-tender and easily pulls away from the bone. Do not open the lid during cooking unless necessary, as this releases heat and extends the cooking time. Let it rest for 3 minutes before slicing.
Look for The sauce is bubbling gently and the meat is visibly shrinking from the bone.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce seems too thin at the end, remove the ribs and simmer the sauce on the stovetop to reduce.

After 8 hours, the kitchen fills with a deep, savory fragrance. The sauce is bubbling gently around the edges, and the meat has pulled back from the bones, looking glossy and dark. The ribs are fork-tender and the sauce has thickened. The sound is a soft, steady simmer—comforting and promising.

Rest and Serve

  1. Rest and Serve
Turn off the slow cooker. Using a fork, carefully lift the short ribs out of the sauce and transfer to a serving plate. Let the meat rest for at least 3 minutes before serving. Spoon some of the sauce from the slow cooker over the ribs.
Look for The ribs are glossy and glistening, with the meat clinging to the bone but ready to fall off.
Tip For a thicker sauce, skim off excess fat and simmer the sauce in a saucepan for 5–10 minutes.

The ribs are lifted out of the slow cooker, steaming and glistening. The meat clings to the bone but gives way easily when pierced. The sauce drips slowly.

The plate is ready, and the ribs are laid in the center, ready to be sauced and served. The final dish looks rich, sticky, and utterly satisfying.

Common mistakes

The most common mistake is lifting the lid to check on the ribs too often—each time you do, heat escapes and the cooking time extends. Trust the slow cooker and leave it closed.

Another mistake is using too little sauce; the ribs need enough liquid to braise properly, so don't skimp on the BBQ sauce. Finally, don't rush the cooking time—short ribs need the full 8 hours to become truly tender.

How to tell it’s done

The ribs are done when the meat is fork-tender and easily pulls away from the bone, usually after 8 hours on LOW. The internal temperature should reach at least 145°F (63°C), but because of the long cook, it will be much higher—the meat will be well past that and falling apart.

If the meat still resists when pierced, continue cooking for another 30 minutes and check again. The sauce should be thickened and cling to the meat.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
