Tips for success
For the most tender ribs, choose racks that are similar in size so they cook evenly. If one rack is much thicker, it may need a little extra time. You can also cut the racks in half to fit more easily in the slow cooker.
If you prefer a spicier kick, leave the seeds in the chipotle peppers or add a pinch of cayenne. For a milder version, use only the adobo sauce and skip the peppers themselves.
To get a caramelized, slightly charred finish, you can broil the cooked ribs for 2 to 3 minutes after they come out of the slow cooker.
Brush them with a little extra sauce and place them under a hot broiler until the edges are crispy. This step is optional but adds a nice texture contrast. If you do broil, watch closely to prevent burning.
Variations
- Spicy Honey Garlic: Replace the chipotle with 1 tbsp sriracha and use a honey garlic BBQ sauce instead of molasses garlic. The result is a sweet-heat combo with a sticky, garlicky finish.
- Brown Sugar Bourbon: Swap the honey for 1/4 cup packed brown sugar and add 2 tbsp bourbon to the sauce. The bourbon adds a smoky depth, while brown sugar caramelizes into a rich glaze.
- Smoky Maple Mustard: Use maple syrup instead of honey and add 2 tbsp Dijon mustard to the sauce. The mustard cuts through the sweetness and adds a tangy kick.
- Chipotle Pineapple: Add 1/2 cup crushed pineapple (drained) along with the chipotle and honey. The pineapple adds a tropical sweetness that pairs beautifully with the smoky heat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water.
- Freezer
- Freeze cooked ribs in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a 300°F (150°C) oven for 15-20 minutes, or in the microwave in 1-minute intervals until hot. Add a little water or sauce to keep moist.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a splash of water or apple juice when reheating to loosen it. These ribs taste even better the next day as the flavors meld.
You can assemble the ribs in the slow cooker insert up to 24 hours ahead. Cover and refrigerate, then place the insert in the slow cooker and cook as directed. Add 30 minutes to the cooking time if starting from cold. Alternatively, cook the ribs fully, cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the ribs whole or cut between the bones into individual pieces. Spoon extra sauce from the slow cooker over the top. These ribs are messy and satisfying, so have plenty of napkins on hand.
They pair beautifully with classic sides like coleslaw, baked beans, or cornbread. For a lighter meal, serve them over a crisp green salad with a tangy vinaigrette.
For a crowd, cut the ribs into smaller pieces and serve as an appetizer or part of a barbecue spread. The sauce is rich and sticky, so provide small forks or let guests eat with their hands.
You can also shred the meat and pile it onto slider buns with pickles and coleslaw for a fun twist. Leftover sauce can be served on the side for extra dipping.

Smoky Chipotle Molasses Baby Back Ribs

Ingredients
- 2 racks pork baby back ribs (about 2 lb total)
- 1 tbsp chipotle peppers in adobo sauce, minced
- 1/4 cup raw honey
- 1 cup molasses garlic BBQ sauce
Instructions
- Place the pork baby back ribs in the bottom of a 6-quart slow cooker, meaty side up. If needed, cut the racks to fit in a single layer. No need to season—the other ingredients bring plenty of flavor.
- Spread the minced chipotle peppers evenly over the ribs, then drizzle the honey over the top. Use a spoon or your hands to rub the mixture onto the meat so every surface gets some smoky sweetness.
- Pour the molasses garlic BBQ sauce over the ribs in thick ribbons, covering as much of the meat as possible. Use a spoon to spread it if needed, ensuring the top of the ribs is well coated.
- Cover the slow cooker and cook on low for 4 hours, or until the meat is tender and easily pulls away from the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 4 hours, insert a fork into the thickest part of the meat. It should slide in easily and twist without resistance. The internal temperature should register at least 145°F (63°C). Let the ribs rest for 3 minutes before serving.
- Using a fork, carefully lift the ribs out of the slow cooker and transfer to a serving plate. Spoon some of the thickened sauce from the pot over the top. Serve hot, with extra sauce on the side if desired.
