Tips for success
For the best texture, choose country-style ribs that have good marbling. The fat keeps the meat moist during the long cook. If you have time, you can trim any large excess fat, but leave most of it.
Also, let the ribs come to room temperature for 20 minutes before adding them to the slow cooker—this helps them cook more evenly, though it's not essential.
The sauce will be thinner right after cooking because the ribs release juices. If you prefer a thicker glaze, remove the ribs and simmer the sauce in a saucepan over medium heat for 5-10 minutes until it reduces.
Or, after shredding the ribs, toss them back in the sauce and let them soak up the flavor for a few minutes before serving.
Variations
- Spicy Mango Ribs: Replace the honey with mango chutney and add 1 teaspoon of red pepper flakes. This gives a sweet-tangy heat that pairs well with the smoky BBQ sauce. Serve with fresh cilantro on top.
- Maple-Bourbon Ribs: Swap the honey for maple syrup and add 2 tablespoons of bourbon to the sauce. The bourbon adds a subtle warmth, and the maple deepens the caramelized flavor. Cook as directed.
- Coffee-Rubbed Ribs: Before adding the sauce, rub the ribs with 1 tablespoon of instant coffee granules mixed with 1 teaspoon of brown sugar. The coffee adds a rich, bitter contrast to the sweet sauce.
- Pineapple Chipotle Ribs: Add 1 cup of crushed pineapple (drained) to the slow cooker along with the other ingredients. The pineapple chunks become soft and infuse the sauce with a tropical sweetness.

Serving ideas
Serve the ribs straight from the slow cooker for a casual, family-style meal. Pile them on a platter and spoon extra sauce over the top.
They pair beautifully with classic sides like coleslaw, cornbread, or a simple green salad. The sticky-sweet glaze also works wonders over rice or mashed potatoes.
For a heartier plate, shred the ribs and pile them onto soft buns for an incredible pulled pork sandwich. Top with pickles and a little extra sauce. The leftovers are just as good—use them in tacos, quesadillas, or over nachos for a quick, flavorful meal.

Smoky Chipotle BBQ Country Pork Ribs: Easy Slow Cooker Dinner

Ingredients
- 3 lb boneless country-style pork ribs
- 2 tbsp chopped chipotle peppers in adobo sauce
- 1/4 cup raw honey
- 1 1/2 cups thick Kansas City-style BBQ sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Spread the chopped chipotle peppers in adobo over the ribs, then drizzle with the raw honey.
- Pour the thick Kansas City-style BBQ sauce over the ribs, using a spoon to spread it evenly so all the meat is covered. There should be enough sauce to pool slightly around the ribs.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the ribs are fork-tender and easily pull apart. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 6 hours, test the ribs with a fork. The meat should shred easily with little resistance. If not, continue cooking in 30-minute increments until tender. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the ribs rest in the sauce for 5 minutes. Then transfer to a serving plate with a fork, spooning extra sauce over the top. Serve hot.
