Tips for success
For an extra layer of flavor, you can sear the beef in a hot skillet before placing it into the slow cooker. This creates a crust that adds depth to the final jus. However, the slow cooker method is designed for ease, so this is entirely optional.
If you choose to sear, ensure the pan is very hot and you only brown the exterior for a minute on each side to avoid overcooking the center before it hits the slow cooker.
If you find the sauce is too thin after shredding, you can remove the meat and simmer the juices on the stovetop for a few minutes to reduce it to your desired consistency. This concentrates the smoky, savory notes and makes the beef even more luxurious.
Be careful not to over-reduce, as the salt content in the spices can become more pronounced as the liquid evaporates. Always taste the jus before adjusting any seasoning to ensure it meets your preference.
Variations
- Spicy Pit-Beef: Add two teaspoons of cayenne pepper or crushed red pepper flakes to the spice rub for a significant kick of heat that complements the smoky flavor of the roast perfectly.
- Sweet and Smoky: Incorporate two tablespoons of brown sugar into the spice rub to add a subtle sweetness that balances the acidity of the apple cider vinegar and enhances the caramelization of the meat.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze the shredded beef in a sealed, freezer-safe bag or container for up to 3 months.
- Reheat
- Reheat gently in a saucepan over low heat, adding a small amount of liquid if needed to maintain moisture.
Store any leftover shredded beef in an airtight container in the refrigerator. It will keep well for up to 3 days. When storing, keep the meat submerged in its own cooking juices; this prevents the beef from drying out and keeps the flavor intact. If you have extra horseradish sauce, store it in a separate container to keep it fresh and prevent it from becoming watery when mixed with the warm beef juices.
You can prepare the spice rub and slice the onions a day in advance to save time. The roast can also be cooked entirely ahead of time and reheated when needed. If cooking ahead, let the meat cool within 2 hours before refrigerating. Reheating gently on the stovetop with a splash of water or beef broth will bring the meat back to life, maintaining its tenderness and smoky flavor for your next meal or gathering.
Serving ideas
Serve these sandwiches immediately while the beef is hot and the rolls are still crisp from toasting. The combination of the warm, smoky meat and the cool, sharp horseradish sauce is best experienced fresh.
Arrange the sandwiches on a platter and serve with a side of coleslaw or pickles to balance the richness of the beef. This makes for an impressive, hearty meal that is perfect for casual weekend lunches or a relaxed dinner with friends and family.
If you are serving a crowd, consider setting up a sandwich bar. Place the shredded beef in a warm chafing dish, offer a variety of rolls, and provide bowls of horseradish sauce and sliced onions. This allows guests to assemble their own sandwiches exactly to their liking.
Providing additional toppings like pickled jalapeños or extra fresh herbs can also add a nice touch. The key to a great service is ensuring the beef stays warm throughout the duration of the meal.

Smoky Baltimore Pit-Beef Style Crockpot Roast

Ingredients
- 3 lb beef rump roast
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp dried oregano
- 1 large white onion, thinly sliced
- 60 ml apple cider vinegar
- 1 stick unsalted butter
- 6 kaiser rolls, toasted
- 1/2 cup creamy horseradish sauce
- 1 medium red onion, sliced into rings
Instructions
- Combine the smoked paprika, garlic powder, and dried oregano in a small bowl. Rub the seasoning mixture thoroughly over the entire surface of the beef rump roast to create a flavorful crust.
- Place the thinly sliced white onion at the bottom of the slow cooker insert. Place the seasoned beef roast on top of the onions. Pour the apple cider vinegar around the sides and place the stick of butter directly on top of the beef.
- Cover the slow cooker and cook on the LOW setting for 7.5 hours. Ensure the beef reaches an internal temperature of 145°F (63°C). Let the meat rest for at least 3 minutes before using two forks to shred the tender meat directly in the pot, mixing it with the bubbling mahogany jus.
- Toast the kaiser rolls until golden brown. Spread a generous amount of creamy horseradish sauce on both sides of the rolls. Pile the shredded smoky beef onto the bottom halves, top with raw onion rings, and close the sandwiches to serve.
