Before you start

Before you start, make sure your slow cooker is clean and dry. If you're using store-bought caramelized onions, have them ready. If making your own, caramelize a batch of onions in advance and store them in the fridge.

The roasted garlic cream sauce can also be prepared ahead—roast a head of garlic, then blend the cloves with cream and a little salt. Cook and crumble the bacon until very crisp, and shred the Gouda from a block. Measure all ingredients so you can layer quickly.

Ingredients at a glance (6)
  • 2 lb frozen tater tots
  • 1 cup crispy crumbled bacon
  • 1 cup caramelized onions
  • 1 cup roasted garlic cream sauce
  • 1 cup shredded smoked gouda
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions

Layer and Top

  1. Layer the Base
Place the frozen tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tots.
Look for The tots should cover the bottom in a single layer, with bacon scattered evenly.
Tip No need to thaw the tots—they will cook perfectly in the slow cooker.
  2. Add Onions and Cream
Scatter the caramelized onions over the bacon. Pour the roasted garlic cream sauce evenly over the entire surface, using a spoon to spread it gently if needed.
Look for The cream sauce should coat the tots and onions, but not completely drown them.
Tip If the sauce is thick, warm it slightly before pouring to make it easier to spread.
  3. Top with Cheeses
Sprinkle the shredded smoked gouda evenly over the top, followed by the freshly grated Parmigiano-Reggiano. Do not stir—the layers will meld as they cook.
Look for The cheeses should cover the top completely, creating a golden crust as they melt.
Tip Grating the Parmesan fresh gives the best melt and flavor.

After layering the tots, bacon, onions, cream sauce, and cheeses, the slow cooker should be filled to about three-quarters full.

The top should be fully covered with cheese, with no bare spots. The ingredients should look colorful and inviting—golden tots, dark bacon bits, and creamy sauce peeking through.

Slow Cook

  1. Slow Cook Until Bubbly
Cover the slow cooker and cook on low for 4 hours, or until the tater tots are tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours.
Look for The edges will bubble gently and the cheese will be fully melted and golden.
Tip Cooking on low keeps the tots from becoming mushy.
  2. Check for Doneness
After 4 hours, check that the tater tots are fork-tender and the sauce has thickened slightly. If the tots are still firm, continue cooking in 30-minute increments.
Look for A fork should easily pierce a tot, and the sauce should cling to the spoon.
Tip Don't overcook—the tots should hold their shape, not turn to mush.

During cooking, the slow cooker will emit a gentle bubbling sound and a rich, garlicky aroma. After 4 hours, the edges will be bubbling, and the cheese will be melted and slightly browned. The sauce should have thickened and the tots should be tender but not falling apart.

Serve

  1. Serve Hot
Spoon the bubbling tater tot bake onto plates or a serving platter. Serve immediately while hot and creamy.
Look for The bake should be steaming with melted cheese stretching from the spoon.
Tip Let it rest for 5 minutes before serving to allow the sauce to set slightly.

When you lift the lid, steam should rise, and the cheese should be glossy and stretchy. A spoon should easily scoop up a portion with tots, sauce, and cheese clinging together. The dish should look like a bubbling, golden casserole ready to be plated.

Common mistakes

One common mistake is lifting the lid too often during cooking, which lets out steam and lowers the temperature. Another is over-stirring—this recipe relies on layers, so resist the urge to mix.

Also, don't use a slow cooker that's too small, as the tots will pile up and cook unevenly. Finally, be careful not to overcook, as the tots can become mushy and the sauce can dry out. Stick to the suggested time and check for doneness only after the initial cooking period.

How to tell it’s done

The tater tot bake is done when the tater tots are tender and easily pierced with a fork, and the sauce is bubbling around the edges. The cheese on top should be completely melted and lightly golden.

The internal temperature of the dish should reach at least 165°F (74°C) to ensure it's heated through, though there are no raw proteins in this recipe. If the tots are still firm, continue cooking in 30-minute increments until they yield to gentle pressure.
