Tips for success
For the best flavor, look for Hatch green chiles that are fire-roasted, as they have a deeper, smokier taste. If you can't find them, use a can of diced green chiles and add a dash of liquid smoke or smoked paprika.
When slicing the potatoes, use a mandoline for consistent thickness—this is the key to even cooking. If you prefer a spicier dish, include a finely diced jalapeño or a pinch of cayenne pepper in the soup layer.
To make this dish ahead, assemble the layers in the slow cooker insert and refrigerate overnight. The next day, place the insert in the slow cooker and cook on low as directed, adding about 30 minutes to the time. If you have leftovers, they reheat well in the microwave or in a 350°F oven. The casserole can also be frozen for up to 3 months; thaw in the refrigerator before reheating.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the top along with the cheese. The smoky, salty flavor complements the Gouda and chiles beautifully.
- Spicy Version: Add 1 finely diced jalapeño or 1/2 teaspoon of cayenne pepper to the chile layer for extra heat. You can also use pepper Jack cheese in place of some of the smoked Gouda.
- Vegetable Add-In: Layer thinly sliced onions or leeks between the potatoes for added sweetness and texture. Sauté them briefly before adding to the slow cooker to soften their flavor.
- Herb Infusion: Sprinkle 1 teaspoon of dried thyme or rosemary over the layers before cooking. Fresh herbs like thyme or chives can also be stirred in just before serving.
Storage and make-ahead
- Fridge
- Store leftovers in a covered container in the refrigerator for up to 4 days. The sauce will thicken when cold; add a splash of milk when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in a 350°F oven for 10-15 minutes. Stir in a little milk to restore creaminess.
Leftover scalloped potatoes can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place a portion in the microwave for 1-2 minutes, or in a 350°F oven for 10-15 minutes.
The sauce may thicken when chilled; stir in a splash of milk or broth when reheating to restore creaminess. For longer storage, freeze the casserole in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
This dish can be assembled up to 24 hours in advance. Layer the potatoes, chiles, and soup in the slow cooker insert, cover, and refrigerate. When ready to cook, add the cheese topping and cook on low for 4 1/2 to 5 1/2 hours, since the cold ingredients will take longer to heat.
You can also cook the casserole fully, let it cool, and refrigerate it for up to 3 days. Reheat in a 350°F oven for 20-25 minutes, covered with foil to prevent drying.
Serving ideas
Serve the scalloped potatoes as a hearty side dish alongside roasted chicken, grilled steak, pork chops, or a holiday ham. They also work well as a vegetarian main course when paired with a crisp green salad and crusty bread.
For a festive presentation, sprinkle with fresh chopped parsley or chives before serving. The creamy, cheesy texture pairs beautifully with simple proteins and roasted vegetables.
For a crowd, set the slow cooker on warm and let guests serve themselves. The casserole will stay creamy for about an hour on the warm setting. If it thickens too much, stir in a splash of milk. This dish is also a great addition to potlucks and Thanksgiving dinners. To make it a full meal, top each serving with a dollop of sour cream and a sprinkle of bacon bits.

Smoked Gouda Green Chile Scalloped Potatoes: Easy Crockpot Side

Ingredients
- 3 lb Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
- 4 oz fire-roasted Hatch green chiles, diced
- 1 can (10.5 oz) condensed cheddar cheese soup
- 8 oz smoked Gouda, shredded (about 2 cups)
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the sliced Yukon Gold potatoes in a large bowl and pat them dry with a clean kitchen towel. Arrange one-third of the potato slices in an even layer on the bottom of a 6-quart slow cooker, overlapping them slightly. Scatter one-third of the diced green chiles over the potatoes. Repeat with the remaining potatoes and chiles to create three layers.
- Pour the condensed cheddar cheese soup over the potato and chile layers, using a spatula to spread it gently so it seeps down between the slices. Do not stir; the soup will create a creamy sauce as it cooks.
- Sprinkle the shredded smoked Gouda evenly over the top of the potato mixture. Follow with the grated Parmigiano-Reggiano, covering the surface completely. Press down gently with a spatula to help the cheeses settle onto the potatoes.
- Cover the slow cooker with its lid and cook on low for 4 to 5 hours, until the potatoes are fork-tender and the cheese is melted and bubbling around the edges. Avoid opening the lid during the first 3 hours to maintain steady heat.
- Turn off the slow cooker and let the casserole rest, uncovered, for 10 minutes. This allows the sauce to thicken slightly and the potatoes to set. Scoop out portions with a serving spoon, making sure to get some of the cheesy sauce from the bottom. Serve hot.
