Leftover smoked brisket is already the best meat in the refrigerator, so give it a job worthy of that dark, peppery bark. Chopped fine, piled with smoked cheddar, tangy pickled red onions and chipotle BBQ sauce, then toasted in beef tallow on a screaming-hot cast-iron griddle, it becomes a quesadilla with a shattering crust and a long, gooey cheese pull in under fifteen minutes.

This is the quesadilla that barbecue leftovers dream of. The method borrows straight from a Tex-Mex pit house: a 10-inch flour tortilla layered with 5 ounces of chopped smoked brisket, a cup and a half of shredded smoked cheddar and Monterey Jack, pickled red onions and a stripe of chipotle barbecue sauce, all pressed and toasted in rendered beef tallow instead of oil.

The tallow does two things at once. It fries the tortilla into deep golden crispness, and it re-warms the brisket's smoky fat so the filling tastes like it just came off the smoker. Two and a half minutes per side is all it takes, and a short rest before slicing keeps every wedge intact.

Ingredients

  • 2 tbsp chipotle BBQ sauce
  • 1 tbsp rendered tallow

For garnish

  • Fresh jalapeño coins, for serving
  • Fresh cilantro leaves, for serving
Contains: gluten, milk

Why this recipe works

The build order is what makes this quesadilla hold together. Cheese goes down first, directly on the tortilla, so it melts against the hot flatbread and becomes a sealing layer rather than a loose pile.

The brisket sits in the middle, chopped small enough to pack flat, and a second blanket of cheese on top melts downward and locks the filling into a single slab. When the whole thing is sliced, the wedges keep their shape instead of shedding meat and onions across the cutting board.

Beef tallow is the other half of the method. It has a high smoke point, so it stays clean at griddle temperature, and because it is rendered beef fat it belongs next to smoked brisket by nature.

It fries the tortilla into blistered, mahogany crispness while carrying a little of the barbecue flavor back into the crust. Cast iron holds the heat steady through the flip, so both sides toast at the same pace and the cheese finishes melting exactly as the crust hits its deepest color.

Notes and substitutions

Choose a brisket with plenty of dark bark and chop it by hand, not in a food processor, which turns it to paste. The cheese blend matters: smoked cheddar brings the pit-house flavor and Monterey Jack brings the stretch, so use both rather than one bagged blend. Pickled red onions should be drained and patted dry, since vinegar pooling on the griddle steams the crust instead of crisping it.

A cast-iron griddle is ideal because its wide flat surface toasts the whole tortilla evenly, but a 12-inch cast-iron skillet works with the quesadilla folded in half. If the tortilla is stiff from the refrigerator, warm it for ten seconds first so it folds without cracking.

Chipotle BBQ sauce can be any smoky barbecue sauce spiked with chopped chipotle in adobo. Beef tallow is sold jarred near the cooking fats, or it can be spooned from the drip pan of a recent brisket cook.

  • smoked beef brisket: Any fully cooked, well-barked barbecue beef works: chopped smoked short rib, smoked chuck roast or thick-cut barbecued tri-tip, all chopped small so the layer lies flat.
  • beef tallow: Rendered bacon fat keeps the smoky direction; neutral oil or butter also works, though tallow gives the deepest, most barbecue-house flavor on the tortilla.
  • chipotle BBQ sauce: Plain smoky barbecue sauce plus a teaspoon of chopped chipotle in adobo, or a thin spread of salsa macha for heat without sweetness.
  • pickled red onions: Thin-sliced raw red onion tossed with a squeeze of lime and a pinch of salt stands in, though it lacks the tangy snap of the pickled version.
