Tips for success
For the best flavor, use a good-quality chicken broth and crushed tomatoes. If you have time, you can brown the chicken in a skillet before adding it to the slow cooker—this adds extra depth, though it's not necessary.
For a thicker broth, mash a few of the potatoes against the side of the slow cooker before serving. For a lighter version, use low-sodium broth and reduce the salt.
This booyah is very forgiving—feel free to add other vegetables like celery or bell peppers if you like. The longer it cooks, the more the flavors meld, so don't worry if it goes a little over the suggested time.
Just be sure the chicken reaches 165°F (74°C). If you prefer a more pronounced herb flavor, add a bay leaf during cooking and remove it before serving.
Variations
- Chicken Thigh Booyah: Swap the chicken breasts for boneless, skinless thighs. They stay extra moist and add a richer flavor. Cook on LOW for 8 hours for the most tender result.
- Vegetable-Boosted Booyah: Add 1 cup of frozen peas or green beans in the last 30 minutes of cooking. They add color and extra nutrition without overcooking.
- Spicy Booyah: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño with the seasonings for a gentle kick. Serve with hot sauce on the side.
- Herb-Forward Booyah: Stir in 2 tablespoons of chopped fresh parsley and 1 tablespoon of chopped fresh dill just before serving. Brightens the flavor and adds a fresh finish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or microwave, adding a little broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until hot. Add a splash of broth or water to loosen the stew if it has thickened.
Store leftover booyah in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if it has thickened too much.
You can assemble the booyah the night before—layer the chicken, vegetables, seasonings, tomatoes, and broth in the slow cooker insert, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. This saves time and makes it easy to start dinner before work.
Serving ideas
Serve this booyah in deep bowls with a side of crusty bread or buttered rolls for dipping into the savory broth. A sprinkle of fresh parsley on top adds a pop of color and freshness.
For a heartier meal, serve over cooked egg noodles or with a side salad. This stew is substantial enough to be a main course on its own.
Pair it with a simple green salad dressed with vinaigrette to balance the richness. If you like a bit of heat, offer hot sauce or red pepper flakes at the table.
The booyah also goes well with pickles or coleslaw for a traditional Midwestern touch. Leftovers are great for lunch the next day—just reheat and enjoy.

Slow Cooker Wisconsin Chicken Booyah

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts, cut into chunks
- 1 lb Yukon Gold potatoes, diced
- 3 medium carrots, sliced
- 1/2 small head green cabbage, chopped
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 can (14.5 oz) crushed tomatoes
- 2 cups chicken broth
Instructions
- Place the chicken chunks in the bottom of a 6-quart slow cooker. Spread them into an even layer. Top with the diced potatoes, sliced carrots, and chopped cabbage, distributing them evenly over the chicken. Sprinkle the dried thyme and black pepper over the vegetables.
- Pour the crushed tomatoes and chicken broth over the top. Do not stir—the liquid will seep down as it cooks. Cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 6 to 8 hours, until the chicken is cooked through and the vegetables are tender. Avoid lifting the lid during cooking to keep the heat steady.
- After 6 hours, check the chicken by cutting into a piece—it should be opaque and reach an internal temperature of 165°F (74°C). The potatoes and carrots should be easily pierced with a fork. If not, continue cooking for another 30 to 60 minutes.
- Turn off the slow cooker and let the booyah rest for 10 minutes. Stir gently to combine the layers. Ladle into bowls and serve hot.
