Before you start

Before starting, grease the slow cooker insert with melted butter to prevent sticking. Gather all ingredients and measure them out. Whisk the cake batter in a large bowl until smooth.

Have the raspberry jam, fresh raspberries, white chocolate wafers, and heavy cream ready to layer. No need to preheat anything—the slow cooker does the work.

Ingredients at a glance (13)
  • 2 tbsp unsalted butter, melted (for greasing the Crockpot)
  • 1 box white cake mix (15.25 oz)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup seedless raspberry jam
  • 2 cups fresh raspberries
  • 1 1/2 cups white chocolate wafers or chips
  • 1/2 cup heavy cream
  • Vanilla ice cream, for serving
  • Fresh raspberries, for garnish, to taste

Instructions

Prep and Layer

  1. Prepare the Crockpot and Batter
Grease the inside of a 6-quart slow cooker with the melted butter, covering the bottom and about 2 inches up the sides. In a large bowl, whisk the white cake mix, eggs, vegetable oil, water, vanilla extract, and almond extract until smooth and no lumps remain. The batter will be thin.
Look for The batter should be smooth and pourable, with a light vanilla-almond aroma.
Tip Use a whisk to eliminate any lumps from the cake mix. Do not overmix; just combine until smooth.
  2. Layer the Batter and Raspberry Swirl
Pour the batter into the prepared slow cooker and spread it evenly. Drop spoonfuls of raspberry jam over the batter, then scatter the fresh raspberries on top. Use a knife or spatula to gently swirl the jam and berries into the batter, creating ribbons without fully mixing.
Look for The jam and berries should be distributed in streaks, not fully blended.
Tip Leave some jam and berries near the surface so they create a beautiful swirl as the cake bakes.

The batter should be smooth and pourable. After swirling in the jam and berries, you should see distinct ribbons of red throughout the pale batter. The white chocolate wafers and cream should be evenly distributed on top, with the cream pooling slightly around the wafers. The slow cooker is now ready to cook.

Slow Cook

  1. Add White Chocolate and Cream
Sprinkle the white chocolate wafers evenly over the top of the batter. Pour the heavy cream over the white chocolate, covering as much of the surface as possible. Do not stir; the cream will help melt the chocolate into a sauce as the cake bakes.
Look for The cream should pool slightly around the white chocolate wafers.
Tip Pour the cream in a slow, steady stream to avoid disturbing the swirl.
  2. Slow Cook on High
Cover the slow cooker with the lid and cook on HIGH for 2 hours and 15 minutes, without opening the lid during cooking. The cake will rise and turn golden around the edges, while the center remains moist and saucy. The white chocolate and raspberry mixture will bubble around the edges.
Look for The edges look golden and set, and the center is slightly jiggly but not liquid.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Resist the urge to peek. Opening the lid releases heat and can extend the cooking time.

After 2 hours and 15 minutes, the cake should have risen and turned golden around the edges. The center will look slightly moist and may jiggle gently when the slow cooker is shaken.

The white chocolate and raspberry mixture will be bubbling around the edges, and the aroma of vanilla and raspberry will fill the kitchen.

Serve

  1. Check for Doneness
After 2 hours and 15 minutes, carefully remove the lid. The cake should be golden around the edges and the center should be moist and tender, not raw. To check, insert a toothpick into the center; it should come out with moist crumbs, not wet batter. The internal temperature of the cake should reach 160°F (71°C) to ensure the eggs are fully cooked.
Look for A toothpick inserted in the center comes out with a few moist crumbs, not wet batter.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the center seems too loose, cook for an additional 10-15 minutes and check again.
  2. Serve Warm
Turn off the slow cooker. Scoop the warm cake into bowls, making sure to include the molten white chocolate raspberry sauce from the bottom. Top with a scoop of vanilla ice cream and garnish with fresh raspberries. Serve immediately.
Look for The cake is warm, tender, and surrounded by a glossy raspberry-white chocolate sauce.
Tip Use a large spoon to scoop from the center to the edges to get both cake and sauce.

The cake is warm, tender, and surrounded by a glossy raspberry-white chocolate sauce. The center should be soft and spoonable, not runny. The edges should be set enough to hold their shape when scooped. Topped with vanilla ice cream and fresh raspberries, it looks like a fine-dining dessert.

Common mistakes

Opening the lid during cooking is the most common mistake—it releases heat and can extend the cooking time significantly. Overmixing the batter can make the cake tough; mix just until smooth.

Using cold ingredients can affect cooking time, so let eggs and cream come to room temperature if possible. Adding too much jam or berries can make the cake too wet; stick to the measurements.

How to tell it’s done

The cake is done when the edges are golden and set, and the center is moist and tender but not raw. A toothpick inserted into the center should come out with a few moist crumbs, not wet batter.

The internal temperature should reach 160°F (71°C) to ensure the eggs are fully cooked. If the center is still very loose, cook for an additional 10-15 minutes and check again.

  • Egg dishes: 160°F (71°C) in the thickest part
