Tips for success
For the most flavorful sauce, use a good-quality wheat beer that you'd enjoy drinking. The beer's fruity esters and spice notes come through after long cooking.
If you prefer a thicker sauce, after removing the chicken, set the slow cooker to high and let the sauce reduce for 15 to 20 minutes, stirring occasionally. You can also whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cook for 5 minutes.
This dish is wonderfully versatile. Serve it over steamed rice, egg noodles, or creamy polenta. For a low-effort side, add a bag of frozen peas to the slow cooker 30 minutes before serving—they'll brighten the color and add a pop of sweetness.
Leftovers make excellent sandwiches: pile the chicken on crusty bread with a little of the sauce.
Variations
- Citrus twist: Add a strip of orange zest and a tablespoon of orange juice along with the beer for a brighter, more floral flavor. Finish with a squeeze of fresh lemon juice before serving.
- Spicy version: Stir in a minced jalapeño or a teaspoon of red pepper flakes with the leeks for gentle heat. The spice mellows during cooking but leaves a pleasant warmth.
- Herb garden: Add a few sprigs of fresh thyme or a bay leaf to the slow cooker with the beer. Remove them before shredding. The herbs add an earthy depth that pairs well with the coriander.
- Creamy finish: After shredding, stir in 1/2 cup of sour cream or heavy cream and heat gently for 5 minutes. This turns the sauce into a rich, creamy gravy without overpowering the beer and coriander.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently until piping hot.
- Reheat
- Reheat in a saucepan over medium-low heat, adding a splash of chicken broth or water to loosen the sauce. Stir occasionally until hot throughout.
Cool the chicken to room temperature within 2 hours of cooking, then transfer to an airtight container. Refrigerate for up to 4 days. The sauce will thicken as it chills; stir in a splash of chicken broth or water when reheating to loosen it.
This recipe is ideal for making ahead. Cook the full dish, cool, and refrigerate for up to 4 days. Reheat gently on the stovetop or in the microwave until piping hot. The flavors continue to meld overnight, so leftovers often taste even better the next day. For longer storage, freeze in portions for up to 3 months.
Serving ideas
Spoon the chicken and sauce over a bed of steamed rice, mashed potatoes, or buttered noodles. The sauce is rich and fragrant, so you'll want something to soak it up.
A side of crusty bread or a simple green salad with a lemony vinaigrette balances the richness. For a low-carb option, serve over cauliflower rice or sautéed greens.
Garnish with a few fresh coriander leaves or a pinch of ground coriander just before serving to brighten the flavor.
The dish is satisfying on its own, but a dollop of sour cream or Greek yogurt can add tang, if desired. Pair with a crisp green salad and a glass of the same wheat beer you cooked with for a complete meal.

Slow Cooker Wheat Beer and Coriander Chicken

Ingredients
- 2 lb boneless, skinless chicken thighs
- 2 cups sliced leeks (white and light green parts)
- 2 tsp ground coriander
- 1 cup wheat beer
Instructions
- Place the chicken thighs in an even layer in the bottom of a 5 to 6 quart slow cooker. Scatter the sliced leeks over the chicken, spreading them evenly. Sprinkle the ground coriander over the top, covering the leeks and chicken as evenly as possible.
- Slowly pour the wheat beer over the chicken and leeks, trying to moisten the top evenly. Do not stir. The liquid should come about halfway up the chicken; if it seems too much, that is fine—the slow cooker will reduce it slightly.
- Cover the slow cooker with the lid and set it to low. Cook for 6 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C) in the thickest part. Avoid opening the lid during cooking to keep the heat steady.
- Once the chicken is fully cooked, use two forks to shred the thighs directly in the slow cooker, mixing them with the leeks and sauce. Serve hot, spooning extra sauce over the top.
